How To make Fried Oysters1
allow 6 to 8 oysters per serving 1 Pt. oysters
2 eggs
2 Tbsp. milk
1 Tsp. salt
1/8 Tsp. pepper
dry bread crumbs or cornmeal
Drain oysters and pat dry on paper towels. Make a batter by beating eggs slightly and stirring in milk, salt and pepper. Dip oysters in batter, then in fine dry bread crumbs or cornmeal. Saute in butter in a single layer or fry in deep fat heated to 375 degrees. Drain on paper towel. Arrange in a shallow baking pan in single layers. Bake at 400 degrees until browned, about 15 minutes.

—INGREDIENTS—
— Oysters
— 1 bunch of Scallions
— Fried Onion or Shallots (buy at Asian market or make it yourself)
— Salt
— Pepper
— Choice of oil (I used Olive for healthiest)
—INSTRUCTIONS—
FRIED ONION & SCALLION SAUCE
1. Prep and chop one bunch of scallions
2. Heat a sauce pot over med-low heat and add olive oil then scallions. Mix well.
3. Once it starts boiling a bit, add fried onions / shallots. Mix well.
4. Add more oil if it’s looking a bit dried up.
5. About a min later, season with salt and pepper. Mix well then set aside.
STEAMED OYSTERS
1. Clean oysters by running it under fresh water and spot check any areas that needs an extra scrub. (not shown in video)
2. Once cleaned, put oysters in a steamer for 5-7 mins depending on the size of the oysters. They are cooked once they start opening up.
3. Once all cooked, set aside and let it cool for 5 mins.
4. Shuck oysters (not shown in video) and top it off with the fried onions & scallions sauce.

1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons sake

2 tablespoons water
25 grams flour (about 3 tablespoons)
60 grams panko (~1 1/2 cups)
Oil for deep frying
100 grams daikon
1/2 tablespoon yuzu juice
1 tablespoon soy sauce

**Make sure you are careful when deep frying and cook the oysters for around 3min. Start at med-heat. If it turns brown too quickly you can lower the heat. **
