How To make Fresh Rhubarb Pie
1 Double crust pastry/9-in
=see recipe 1 1/2 c Sugar
2 1/2 tb Cornstarch
1/4 ts Ground nutmeg
1/2 ts Grated orange rind
1/4 c Orange juice
2 tb Butter or margarine
4 c Rhubarb; sliced
Recipe by: Southern Living
Roll half of pastry to 1/8-inch thickness on a lightly floured surface. Place in a 9-inch pieplate; trim off excess pastry along edges. Cover with plastic wrap, and chill until ready to fill. Combine sugar, cornstarch, and nutmeg in a heavy saucepan, stirring to blend cornstarch well. Stir in orange rind, juice, and butter. Cook over medium heat, stirring constantly, until thickened and bubbly. Stir in rhubarb. Spoon rhubarb mixture into prepared pastry shell. Roll remaining pastry to 1/8-inch thickness; cut into 1/2-inch strips. Arrange strips, lattice fashion, across top of pie. Trim strips even with edges; fold edges under and flute. Bake at 425 degrees for 10 minutes. Reduce heat to 350 degrees and bake an

There's something about rhubarb pie and summertime, they just go hand in hand! This rhubarb pie is a must have during any summer fika or celebration, top with some vanilla ice cream and you're good to go ????
Read my rhubarb recipe down below, and don't forget you can always switch the vanilla sugar for vanilla extract!
Rhubarb Pie Recipe
CRUST
2 ½ cups (6 dl) All-Purpose Flour
2 tbsp Powdered Sugar
1 tsp Salt
1 ¼ (275 g) cups Cold Butter, Cubed
1/3 cup (3/4 dl) cold water
FILLING
4 cups (11 dl) Rhubarb Stalks
1 cup (2 1/3 dl) Granulated Sugar
1/3 cup (3/4 dl) Brown Sugar
2 tsp vanilla sugar
1/3 cup (3/4 dl) All-Purpose Flour
EGG WASH
1 Egg
1 tbsp Water
Couple of pinches of raw sugar for sprinkling over the pie.
Put the pie tin on a baking sheet and bake on the bottom shelf at 350 °F/180 °C for about 35 minutes.
