BETH'S FABULOUS FIG CAKE
Serves 8-10
INGREDIENTS:
3 eggs
1 cup (240ml) of vegetable oil
½ cup (100g) sugar
½ cup(90g) light brown sugar
½ cup (120ml) water
1 ½ tsp (7.5ml) vanilla extract
2 cups (240g) all-purpose flour
2 tsp (10ml) baking powder
¾ tsp (3.75ml) salt
1 ¼ tsp (6.75ml) ground cardamom
1/3 cup (50g) crystalized ginger, diced
5-10 fresh figs (depending on size) sliced vertically (or sliced pears or sliced apples would be great too!)
Crumble:
½ cup (60g) all-purpose flour
½ tsp (2.5ml) baking powder
pinch of salt
2 tbsp (25g) white sugar
2 tbsp (23g) brown sugar
¼ tsp (1.25ml) cinnamon
5 tbsp (75ml) melted butter
1/2 cup (75g) chopped walnuts
METHOD:
Preheat oven to 350F (175C)
Spray a 9” cheesecake pan with baking spray and set aside.
In a large bowl combine eggs, oil, sugars, water and vanilla extract. Whisk to combine and set aside.
In a small bowl combine flour, baking powder, salt and cardamom. Whisk to combine.
Add the dry ingredients to the wet ingredients and whisk slowly to combine. Stir in the candied ginger.
Pour cake batter into pan, arrange figs cut side up, in a circle around the cake. Set aside.
To make crumble, whisk together the flour, baking powder, salt, sugars and cinnamon until combined. Add the melted butter and stir with a fork until a crumble forms. Then stir in the walnuts.
Sprinkle crumble on top of figs and cake, evenly distributed.
Bake cake for 50 mins-1 hour, or until a skewer comes out clean. If top starts to brown too quickly cover with foil until fully baked through. Allow to cool and serve for tea time or for Sunday brunch!
NOTE: This cake reheats beautifully! Just wrap tightly in foil and refrigerate, then place in oven (covered in the foil) and bake at 350F for 20 mins or until warmed through.

Holy wow - filming and baking with Gram.. truth be told this might juuuuust be my favorite video thus far. Full disclosure, these muffins turned out crazy crazy good. So good in fact, I ate 4 of them today. True Story. HBD to me :) #letmeeat My heart and my tummy are quite full and I couldn't be happier.
Oh and I have to mention, the name of the song in the video is muffin.. If there was ever a greater fitting shoe, am I right?!

How to Make Fresh Figs and Ricotta Cake | Easy Recipe for Beginner
Fresh Figs and Ricotta Cake have an amazing flavor blend. The ricotta has a light, moist, buttery rich flavor and the fresh figs add the perfect amount of sweetness. This is an easy recipe for beginner bakers. With the abundance of fresh figs season, this is an easy recipe and makes for a great quick, and easy dessert. The combination of Fresh Figs and Ricotta makes for a delicate cake perfectly paired with a latte. Guaranteed, Fresh Figs and Ricotta Cake will be your new favorite!
½ cup Ricotta, whole
½ cup Yogurt
1 egg
4 Tablespoons Butter
Pinch of salt
½ cup Sugar
½ cup flour
2 teaspoons Baking Powder
Vanilla Extract
Fresh Figs, sliced
Preheat oven 350 degrees
1. In a large bowl, add ricotta, yogurt, egg, butter, and vanilla extract and mix until well incorporated.
2. Slowly add sugar while continuing to whisk all ingredients together.
3. Add all the dry ingredients until batter is well combined.
4. In a parchment-lined 8 x 8 pan, add the cake batter and evenly spread.
5. Add sliced figs on top of cake batter.
6. Bake in the oven for 30 – 40 minutes or until golden brown.
7. When the cake is cooled, garnish with powdered sugar, additional fresh figs, and mint.

Fig, date & Sultana muffins
Recipe - fig, date & sultana muffins
* 100g dried figs
* 100g pitted dates
* 100g sultanas
* 1.5 cups orange juice
* 1/2 teaspoon bicarbonate of soda
* 1/3 cup sugar
* 1 cup self raising flour
* 1.5 teaspoons ground cinnamon
* 1 teaspoon clove
* 1/2 teaspoon nutmeg
* 1 egg
Simmer the dried fruit with 1 cup orange juice for 10 mins, take off the heat and add in the bicarb and allow to rest until cooled.
Combine the sugar, flour, spices, remaining orange juice and beaten egg and then add in the fruit mix.
Spoon into muffins tin cakes and bake at 180degrees for 20-25 mins.
