2 c Diced mango (avoid fibrous
-parts) 1/4 c Chinese preserved black
-beans, rinsed 1/4 c Green onions, thinly sliced
-on the bias 1/4 c Diced red onions
2 tb Grated ginger
2 Red jalapeno peppers,
-sliced in thin circles 1 sm Sweet red pepper, diced
1/2 CUP MIXED, CHOPPED FRESH:
Oregano Zest and juice of one lime Zest and juice of one orange 1/4 c Rice wine vinegar
1 c Light olive oil
1 tb Toasted cumin seed
Mix together all ingredients; adjust seasoning with salt and citrus. Let sit for a few hours before serving. Posted by Stephen Ceideburg; January 19 1991.

Mango Chutney Recipe | Sweet and delicious spiced chutney
This is a great little homemade mango chutney using some whole spices to get little pops of flavour throughout. So simple to make and doing it from scratch allows you to get the flavour that works best for you. This is my favourite mix but have a play around with your own. Can be made spicy or mild.
Goes wonderfully with poppadoms or with my smoked mackerel kedgeree
Ingredients
makes 400ml
600g whole mangoes or 300g cubed
1 garlic clove
1 tbsp chopped fresh ginger
1/2 fresh red chilli
1/2 tsp cumin seeds
1/2 tsp ground coriander
1/4 tsp ground turmeric
1/4 tsp fennel seeds
1/4 tsp salt
100ml white wine vinegar
250g caster sugar
1 tbsp vegetable oil

This Mango season make this easy chutney recipe for family and serve it with any Indian Flat Bread.
Ingredients:
1 - Raw Mango ( Peeled & Chopped)
1/2 Chopped Onion
Water
1 tsp Kashmiri Red Chili Powder
1/2 tsp Cumin Seed Powder
Salt to taste
1 tbsp jaggery
Method of preparation:
In a mixer jar add Raw Mango, chopped onion, grind them together.
Add some water to it and grind it once again.
The Raw Mango and onion paste is ready.
Add red chili powder, cumin seed powder, salt, jaggery to the paste and grind it again.

A good Mango Chutney Recipe is sweet, spicy and full of flavor! This recipe is so easy you will never have to buy one again. It is so versatile you can add it just about anything.
Makes approx. 4 Cups
Ingredients
165ml (2/3 cup) white wine vinegar
(or alternatively 100ml of vinegar and 65ml of lemon juice)
100g (1/2 cup) brown sugar
1 onion, finely diced
4 cloves garlic, peeled
1 tbs fresh ginger
4 mangoes, peeled and slice
5 cardamom pods bruised (optional)
3 cloves (optional)
1 cinnamon stick (optional)
Chilli to taste (optional)
Directions
Prepare the mangos by chopping them into 1 1/2cm cubes
Chop the onions, finely chop or grate ginger and garlic and bruise the cardamom pods.
Add Vinegar and/or lemon to a saucepan with ginger, garlic, onions, spices and sugar, then bring to a simmer and leave for 30 minutes or until the liquid has reduced by half.
Next add the mangos and bring back to a simmer. Cook it for another 5 minutes, turn the heat off and let the Mango chutney cool, then place it in some sterilized jars.
This Mango chutney can be served with curries and rice and when spread on sandwiches it just lifts the sandwich to another level.
