3/4 c Olive oil
5 Garlic cloves, chopped
1 Onion, chopped
1 Pepper, red bell, chopped
2 Zucchini, chopped
2 Carrots, chopped
2 Celery stalks, chopped
35 oz Tomatoes, canned (28 oz?)
1 1/2 lb Tomatoes, fresh ripe
3 tb Chili powder
1 tb Cumin
1 tb Basil
1 tb Oregano
2 ts Pepper
1 ts Salt
6 oz Beer, flat
1/2 c Parsley, chopped
12 oz Kidney beans
12 oz Garbanzo beans
1/4 c Dill, fresh, chopped
2 ts Lemon juice
Cheese, shredded Sour cream Sunflower seeds Heat 1/4 cup olive oil in a skillet. Add garlic, onion, and red pepper, and saute. In a second pot, put remaining oil and saute zucchini, carrots, and celery. Add ingredients from the first pot. Add tomatoes, spices, beer, and parsley. Cook for 30 minutes, uncovered, stirring occasionally. Add beans, dill, and lemon juice. Cook 15 minutes longer, stirring. Add more chili powder if needed. Serve topped with cheese, sour cream, and sunflower seeds.

1 (8 oz.) can tomato sauce

Precooked the Ground Beef and Bacon and Drained (in the pressure cooker on saute)
2 lbs Ground Beef (I used 80/20)
1 Large Yellow Onion
4 Cloves Garlic
Adobo Spice to Taste and Ground Pepper
1/2 lb Maple Bacon (precooked in the pressure cooker and drained)
4 Bell Peppers (Green, Red, Yellow, Orange)
3-4 Chipotle Peppers in Adobo Sauce
3/4 Cups of Stock or Water (I used Ginger Miso Broth from Trader Joe's)
3 Stalks Chopped Celery
1 or 2 14.5 oz Cans of Bush's Chili Beans - Pinto Low Sodium
1 14.5 oz Can Del Monte Zesty Style Diced Tomatoes
1 15 oz Can Hunt Fire Roasted Tomatoes with Garlic
1 6 oz Can of Tomato Paste
1/2 Package McCormick's Chili Seasoning Low Sodium Mild
1/4 Cup Mole
2 Tablespoons Gochujang
3 oz Bourbon
1/2 Tablespoon Fish Sauce
1 Tablespoon of Soy Sauce
1 Tablespoon of Worcestershire Sauce
1 Tablespoon Dry Oregano
1 Tablespoon Cumin
Chili Powder to Taste
Garnish:
1/2 lb of Maple Bacon cooked in oven (crispy)
Pickled Jalapeno Peppers
Sour Cream
Blended Shredded Cheese of Choice
Corn Bread
Cook time: 20 minutes - Total Cook Time about 60 Minutes (pressure, cook, release about 20 min each)
Release: Natural (do NOT do a quick release)

This week on the Torte Test Kitchen, I’m sharing an easy and delicious chili recipe from A Batter of Life and Death, the second book in my Bakeshop Mystery Series. This rich and savory chili is the perfect comfort food for these cold winter nights. It’s also super easy to put together and keeps for several days in the fridge. In fact, some say it’s even better the next day. There’s one “secret” ingredient included in this recipe that I think Sloan, the protagonist from my Sloan Krause Mysteries, would definitely approve of. Any guesses? ????

TORTE CHILI
INGREDIENTS:
1 lb lean ground beef
2 15 oz cans crushed tomatoes
4 stalks of celery
1 large onion
3 cloves garlic
1 15 oz can black beans drained
1 15 oz can pinto beans drained
1 15 oz can kidney beans drained
¼ cup dark beer (Mom uses a chocolate stout)
1 cup beef stock
¼ cup molasses
2 heaping tbsp chili powder
2 tsp cumin
Salt and pepper to taste.
DIRECTIONS:
Brown ground beef. Drain fat. Chop onion, celery, and garlic and sauté with beef until the onions become translucent. Add tomatoes and beans. Mix well, then add all remaining ingredients to pot. Season with salt and pepper to taste. Cover with a lid, turn heat to low and simmer for three to four hours.
Garnish chili with your favorite toppings: sour cream, shredded cheese, green onions, olives, tortilla chips, peppers, salsa, and/or fresh cilantro.

Chili Corn Soup For Hard Times Like These - 4 Cans, 1 pot, 5 Minute Meal - The Hillbilly Kitchen
Chili Corn Soup - This meal will get you through some hard times but is good for anytime.
Even if you are down to those last few cans in the back of the cabinet you can still enjoy a filling delicious meal.
There are lots of substitutions that will work in this recipe and a few extras that will really spruce it up.
This does have the taste and texture of chili, and if you don’t like chili change the spices.
Using about ½ a jar of spaghetti sauce will give you a very different flavor. This won’t last forever, and we will get through it together.

Ingredients:
1 can Corn
1 can Kidney Beans (Black, Pinto or Northern Beans will work}
1 can Diced Potatoes (can use fresh potatoes)
1 can Diced Tomatoes (Tomato Sauce or Paste or even Ketchup will work)
Season to Taste With:
Chili or Taco Season Pack or
Chili Powder
Any Dried Pepper
Salt
Sugar
Thicken with:
1 tablespoon Corn Starch or 2 tablespoons Flour or Potato Flakes
To make it more filling and tastier, if you have it add:
2 tablespoons Butter or Other Fat
Top with any Cheese
