How To make Fluffy Grasshopper Pie
1 1/2 c Reduced fat Oreo cookie
-crumbs 1/4 c Reduced fat margarine,
-melted 3 tb Granulated sugar
3 oz Lime gelatin powder
2/3 c Boiling water
1/2 c Cold water
Ice cubes 1 ts Peppermint extract
8 oz Cool Whip Free, thawed
To prepare crust, combine crumbs, margarine, and sugar in a mixing bowl. Press mixture firmly in a 9" pie pan. Spread crumb mixture evenly in pie pan. Chill 1 hour, or until firm. To prepare filling, completely dissolve gelatin powder in boiling water. Combine cold water and ice cubes to make 1 1/4 cups. Add to gelatin mixture, stirring until slightly thickened. Remove any unmelted ice cubes. Fold peppermint extract into whipped topping. Using wire whisk, blend whipped topping mixture into gelatin mixture. Then, whip until smooth. Chill until mixture mounds. Spoon into crust. Chill 2 hours. Betty's Gorgeous Grasshopper Pie
Betty demonstrates how to make St. Patrick's Day Grasshopper Pie. The only connection this pie has to St. Patrick's Day is that it is a gorgeous green color. The pie is made of marshmallows, crème de menthe, crème de cacao, and whipped cream. It is served in a Chocolate Crumb Pie Crust and garnished with sweetened whipped cream, chocolate curls, and green maraschino cherries.
Gorgeous Grasshopper Pie
1 baked Chocolate Crumb Pie Crust (You will find a recipe for this in Betty's Kitchen. If you prefer, you may use a ready-made chocolate pie crust.)
32 large marshmallows
2/3 cup milk
¼ cup crème de menthe (You may substitute 1 tablespoon mint flavoring for a non-alcoholic version.)
3 tablespoons white (clear) crème de cacao—or crème de cocoa (You may substitute 2 teaspoons white chocolate flavoring for a non-alcoholic version. If you cannot find white, the color of the chocolate flavoring will darken the coloring of the finished pie.)
1 ½ cups chilled whipping cream
½ cup additional chilled whipping cream
small amount of confectioner's sugar
dark chocolate curls or shavings (You will find a Quick Tip on making chocolate curls in Betty's Kitchen.)
green maraschino cherries
Heat 32 marshmallows with 2/3 cup milk in a saucepan over low to medium heat, stirring constantly until marshmallows are melted. Reduce heat if the sauce begins to stick to the bottom of the saucepan, and continue to stir continuously. (If the sauce sticks to the saucepan, it will brown slightly, causing small brown flecks in your pie mixture.) Chill sauce until thickened. Blend in ¼ cup crème de menthe and 3 tablespoons white (clear) crème de cacao. Use a mixer to beat 1 ½ cup whipping cream until stiff. Fold whipped cream into marshmallow mixture. Pour into baked chocolate crumb crust. With a mixer, beat ½ cup whipping cream until stiff. Add confectioner's sugar, to taste. Place dollops of sweetened whipped cream evenly in a pattern on top of pie. Sprinkle chocolate curls or shavings on top of the whipped cream (or over the entire top of the pie). Place a green maraschino cherry on top of each dollop of whipped cream. Place pie in the refrigerator for 4 hours (or more), so that it will become firm. Cut individual slices and place them on nice dessert plates. This is a showy, dramatic dessert that tastes wonderful, and it allows you to have something green for dessert on Saint Patrick's Day! HOW TO MAKE GRASSHOPPER PIE: Easy Grasshopper Pie Recipe Made with Cool Whip & Cream Cheese
Here's How to Make a Grasshopper Pie probably the easiest way possible, using Cool Whip, cream cheese and sweetened condensed milk. It's creamy, minty, chocolaty and overall just a fantastic no-bake dessert. And because it's a beautiful green color, it's also perfect for St. Patrick's Day! So, if you want to make a Grasshopper Pie, but don't want to bother with melting marshmallows, read on for the easy recipe.
Grasshopper Pie
For the pie crust:
25 Oreo cookies
4 Tbsp. melted butter
Place cookies (no need to remove cream filling)in food processor and purée into fine cookie crumbs. If you don't have a food processor, place cookies in a ziplock bag, seal, and crush finely with a rolling pin. Add Melted butter to cookie crumbs and mix well. Dump cookie crumbs into 9 pie plate and press down to form smooth pie shell. (It's helpful to use the bottom of a cup to press down.) Place pie shell in refrigerator to chill for 30 minutes.
For pie filling:
1 8oz. block cream cheese, softened
1/4 cup sweetened condensed milk
1 8oz. tub whipped cream (plus more if you choose to decorate top with it.)
1 tsp. vanilla extract
1 tsp. mint extract
green food coloring
In large mixing bowl, combine cream cheese and sweetened condensed milk using an electric hand mixer. Add vanilla extract, mint extract, and 10 drops of green food coloring. Mix until smooth. Fold in whipped cream and with a rubber spatula, whip together until you have a smooth, evenly colored consistency. (If you want your pie a darker green, add more food coloring a drop or two at a time.) Pour pie filling into pie shell and spread out evenly, making sure the top is smooth. Decorate top of pie to your liking, and chill in refrigerator 6-8 hours before serving.
