How To make Grasshopper Cheese Cake
1 9-in springform pan
CHOCOLATE COOKIE CRUMB CRUST:
1 1/2 c Chocolate cookie crumbs
1/4 c Melted butter
1/4 ts Cinnamon
CHEESE FILLING:
1 lb Cream cheese
-at room temperature 1 c Sugar
1/3 c Green creme de menthe
3 tb Creme de cacao
2 tb Flour
1/2 ts Salt
6 Eggs; separated
1 c Sour cream
2 oz Semisweet chocolate
- grated to garnish - the top of the cake CHOCOLATE COOKIE CRUMB CRUST: Combine chocolate cookie crumbs with melted butter and cinnamon. Toss and mix well. Press into the bottom and partially up the sides of the springform pan. Refrigerate and, while making the filling, preheat the oven to 325F. CHEESE FILLING: Put the cream cheese in a mixing bowl and beat until light and soft. Add 3/4 cup of the sugar and mix well. Stir in the creme de menthe and the creme de cacao, flour and salt. Beat until the mixture is blended well. Add the egg yolks and sour cream, and beat until the batter is smooth and blended. Combine the egg whites and 1/4 cup remaining sugar and beat until the whites stand in soft peaks. Fold the beaten whites into the cream-cheese mixture. Pour the batter into the crust and bake for about 1 hour, or until the cake has puffed and trembles just slightly when
shaken. A wooden skewer inserted in the cake should come out almost clean, with just a trace of batter or moist crumbs on it. Don't overbake; it will settle and firm somewhat as it cools. Don't worry if the cake cracks as it bakes. Remove and cool. Refrigerate if standing more than 4 hours. Garnish the top with grated chocolate.

Chocolate Crust:
1 1/2 cups pumpkin seeds
1 1/2 raw cacao powder
1/2 cup tigernut flour (or any flour)
1 3/4 cup coconut flakes
1/2 cup maple syrup
Place pumpkin seeds in a food processor and grind into flour. Add remaining ingredients. Pulse until it comes together. Press into a parchment-lined 6 in circle cake pan.
Mint filling:
7 oz avocado
7 oz coconut cream
2 tbsp maple syrup
5 drops peppermint essential oil or about 1/2-1 tsp peppermint extract
4 1/2 oz coconut butter (1/2 cup)

GRASSHOPPER CHEESECAKE RECIPE
30 mint fudge cookies crushed
2 tablespoons butter
mix these two ingredients to form crust press into 9 in springform pan
24 oz Cream Cheese
1 cup sugar
1/2 teaspoon mint extract
4 eggs
green food coloring
4 oz of semi sweet chocolate
mix ingredients add one egg at a time preheat oven to 300° wrap springform pan in aluminum foil place in water bath cook 60-90 minutes until it is done..... best to let cheesecake chill overnight
How to Make Grasshopper PIe
Grasshopper Pie is a frozen minty flavored pie with an Oreo cookie crust. Its no-bake filling contains a whipped fluffy marshmallow mixture spiked with Creme de Menthe and Creme de Cacao, and frozen before serving.
???? Ingredients ????
▢ 30 Oreo cookies
▢ 6 Tablespoons butter, melted
▢ 30 large marshmallows
▢ 2/3 cup half and half
▢ 1 cup heavy cream
▢ 1 teaspoon vanilla extract
▢ Extra cookie crumbs, for garnish
▢ 2 Tablespoons Creme de Menthe Liqueur (more to taste)
▢ 2 Tablespoons Creme de Cacao Liqueur
???? Instructions ????
⭐️Oreo Crust:
Add the whole Oreo cookies to a food processor and pulse into fine crumbs. Pour the crumbs into a bowl and stir in melted butter.
Press mixture evenly and firmly into the bottom and up the sides of a 9in pie dish. Bake for 10-12 minutes. Set aside to cool.
⭐️Grasshopper Pie Filling:
Mix marshmallows and half and half in saucepan over medium low heat, stirring constantly, until marshmallows are melted. Remove it from the heat and put it in the refrigerator to cool for about 20 minutes. Be sure to scrape the marshmallows from the side of the pan and stir them after about 10 minutes in the refrigerator to prevent the marshmallows from hardening.
Once the mixture has cooled, stir in the creme de Menth, creme de cacao, and food coloring.
In a separate large bowl, use a mixer to beat the heavy cream to stiff peaks. Fold cream into mixture and poor into cooled pie crust. (optional- sprinkle the top with cookie crumbs or grated chocolate).
Freeze the pie for at least 2 hours or refrigerate for at least 6 hours uncovered until the top is set and then covered with plastic wrap.
