A very easy cake to make, and has a beautiful fluffy texture you’ll love!

Apple cinnamon cake

2 cups self raising flour
1 cup sugar
1 cup milk
1 cup oil
3 eggs
1 tsp Vanilla
1 tsp baking powder
2 apples
3 tsp brown sugar
1 tsp cinnamon
1- Preheat oven to 160°C.
2- Peal and remove seeds from apples and dice into approx 2 cm pieces. Transfer to a bowl, add sugar and cinnamon and mix well.
3- Place eggs, sugar and vanilla into a bowl and mix using a hand whisk until well combined, light and fluffy.
4- Add flour, baking powder, milk and oil and whisk until well combined.
5- Prepare baking tin by spraying with oil (if using a non stick pan such as dorsch), otherwise line with baking paper to prevent cake sticking. Pour cake mixture into prepared pan then add apple pieces on top (spacing them out as much as possible).
5- Place cake in the oven and bake until a skewer comes out clean (approx 40-45 mins depending on tin size).
6- Once it cools down, transfer to serving tray, sprinkle with icing sugar and enjoy!

We would like to share with everyone how to make the soft and fluffy golden pillow cake
Main Ingredients:
1. Egg yolk x4
2. Egg white x4
3. Corn oil 40g
4. Milk 60g
5. Cake flour/Low gluten flour 90g
6. Corn flour 15g
7. Baking powder 2g
8. Salt 1g
9. Sugar 60g
10. Few drops of lemon juice
11. Some melted butter
12. Some almond flakes
Method:
1. Split 4 eggs into egg white & egg yolk.
2. Add 40g corn oil & 60g milk into egg yolk, then mix it well.
3. Add 15g corn flour, 2g baking powder & 1g salt into 90g cake flour/Low gluten flour, then mix it well.
4. Sift the flour mixture then add into egg yolk paste. Mix it well till no flour seen.
5. Add in few drops of lemon juice into egg white (to prevent overbeating & to stabilize the egg white).
6. First, beat the egg white with high speed. Add in 1/3 of 60g sugar when bubble size slightly bigger than fish eyes.
7. Continue beat the egg white with medium speed. Add in next 1/3 of 60g sugar after egg white smooth & fine.
8. Continue beat the egg white. Add in the last 1/3 of 60g sugar after texture seen on egg white.
9. Lastly beat the egg white with low speed. Beat the egg white till firm peak formed.
10. Add in 1/3 of meringue into batter. Fold & mix it gently. Then add back into meringue, continue fold & mix gently.
11. Put the baking paper at the bottom of toast mold (450g mold).
12. Pour the batter into mold. After spread it evenly, insert a chopstick & move in zigzag motion (this can help to remove the bubble from batter).
13. Bang the mold few times till mixture smooth.
14. Squeeze the melt butter at the center line of batter. This can make the cake crack evenly.
15. Put on some almond flakes.
16. Bake in preheat oven for 50 minutes (150C/302F).
17. Completed.

6. 首先以高速打蛋白。當蛋白打至大氣泡後加入1/3 60克的糖。
7. 接下來以中速打蛋白。當蛋白打至細膩後加入第二次 1/3 60克的糖。
8. 繼續打蛋白。當蛋白出現紋路後加入第三次1/3 60克糖。
9. 最後以低速打蛋白。蛋白打至中性發泡。
10. 將1/3蛋白霜加入蛋黃糊中。輕輕翻拌後加入回蛋白霜裡輕輕翻拌。
11. 把烘焙紙放入吐司麵包模具底部(450克模具)。
12. 蛋糊倒入模具中。分佈均勻後將一支筷子插入以Z字型移動 (這能幫助多餘的氣泡更好的排出)。
13. 摔敲模具幾次至蛋糊平滑。
14. 將黃油擠在蛋糊中心線。
15. 蛋糊表面撒些杏仁片。
16. 預熱烤箱烘烤50分鐘(150度C/302度F)。
17. 完成。

Fluffy Strawberry Shortcake Recipe : This strawberry shortcake is made with moist and fluffy vanilla sponge cake layers filled with light and sweet whipped cream and fresh strawberries. Here in this strawberry shortcake recipe I am using light cream cheese frosting instead of whipped cream which imparts a richer flavor to the cake.

Fluffy Strawberry Shortcake Recipe

7 Medium eggs at room temperature
1 Cup or (200g) Granulated sugar
1/4 tsp Salt (if you use unsalted butter)
2 Cups or (240g) Cake Flour
4 tbsp or (57g) Butter (melted)
1 tsp Vanilla Extract
Whipped Cream
Cream cheese 120g
Cream 1 Cup / 250 ml
Vanilla extract 1/2 tsp
Powdered sugar 2 tbsp
Butter 1 tbsp
Fresh Strawberries 250g
Preheat the oven to 165 degree Celsius.
In a heatproof bowl, whisk together the eggs and the sugar.
Place the bowl over a saucepan of boiling water, making sure the bottom of the bowl isn’t touching the water.
Whisk the mixture constantly over the saucepan of hot water.
Using an electric mixer with the whip attachment, beat the mixture on medium-high speed until it becomes very light and fluffy, about 10 minutes. It should be lighter in color, and be very thick; the batter should fall in ribbons from the beater.
Remove the bowl from the saucepan.
Add butter and vanilla and mix well.
Add the cake flour in 2 to 3 additions and fold in gently to incorporate. Make sure not to over mix or deflate the eggs.
Transfer the batter into the lined 8 inch pan and tap to remove any large air bubbles.
Bake in a preheated oven @ 165 C for 30 to 35 minutes, or until a skewer inserted in the middle comes out clear.
The finished cake will be gold brown and spring back when touched lightly in the center.
Take it out of the oven and let it cool down completely before cutting the cake.
Make light cream cheese frosting by whipping cream cheese, cream, vanilla and powdered sugar in a large bowl until stiff.
Cut the cake into two add whipped cream cheese frosting and strawberries between the layers and on top of the cake and enjoy!
