My breakfast box for overnight oats!
As someone who struggles to make breakfast every morning, overnight oats are one of the easiest ways for me to get in a satisfying and delicious meal! I’ve tried many overnight oats recipes, but this is one of my favorites.
Overnight oats is typically made in a mason jar, but I often found it difficult to mix the ingredients together, especially when I used my small mason jar. Once I prepared my overnight oats in my snack box, I never looked back! Not only is it portable, but it’s also easier to mix and saves me time in the morning by allowing me to store toppings in the same container but separately from the oats. *Snack container listed on my Amazon storefront*
Recipe:
- 1/2 cup oats
- 1/4 c plain Greek yogurt
- 1 tbsp chia seeds
- 3/4-1 tbsp maple syrup
- 1/4 tsp vanilla extract
- 1/2 cup almond milk (or whichever milk you prefer!)
- Cinnamon
Topping:
- Diced apples
- Chopped pecans
- Drizzle of maple syrup

How to Make the Best Spelt Waffles!

Waffles are easy to make. You can make Waffles in less than 7 minutes if you have all of the ingredients. My Spelt Waffles are no different. They're crispy on the outside, and quite soft on the inside. I used a personal Waffle maker. It's my favorite type of Waffle maker because it keeps me honest with my portions... and let's be honest, it produces really cute little Waffles. Confession, I've never liked that word cute.
Anyhow, rather than use regular Spelt Flour (with the bran) to make my Waffles, I used white Spelt flour (bran removed). It tastes miles better and it produces Waffles that are pleasing to behold. Lol... did I just type the word behold? I sound like Moses. Brethren behold! the wrath of my Waffle maker is upon thee. Smh I digress. In this video, I did a lot of things that may not sit well with some people (Belgians?), but just give everything a try and let me know what you feel in the comments section. I'm sure I'm in serious trouble for breaking the ultimate laws of Waffle preparation. Hey, please use a kitchen utensil to remove your Waffles from the Waffle maker. I do not advise anyone to use their bare hands. The Waffles come out extremely hot!
These Waffles are %100 Alkaline Vegan and they're %100 Vegan as well. Chef Anna Olson makes shows you how to make amazing buttermilk waffles from scratch! These big, homemade waffles can be made with chocolate chips if you choose, and topped with maple syrup and fresh berries for garnish.

Ingredients
1 ½ cups (225 g) all-purpose flour
2 Tbsp (25 g) granulated sugar
1 Tbsp (9 g) baking powder
½ tsp (2.5 g) fine salt
1 ¼ cups (310 mL) buttermilk
½ cup (125 mL) vegetable oil
2 large eggs, separated
1 cup (175 g) chocolate chips (optional)
Maple syrup and fresh berries, for serving
Directions
1. For the waffles, stir the flour, sugar, baking powder and salt together. In a separate bowl, whisk the buttermilk, oil and egg yolks together. Add this to the dry mixture and stir gently until blended (but, like pancake batter, a few lumps are OK).
2. In another bowl, whisk the 2 egg whites (by hand or with electric beaters) until they hold a soft peak when the whisk or beaters are lifted. Fold these gently into the batter. Stir in the chocolate chips, if using.
3. Preheat your waffle iron according to instructions. Lightly grease the iron (if requested in the instructions) and ladle batter to fill the iron once closed (the first waffle is your test as to how much batter to use). Cook the waffle until lightly browned at crisp, and remove. Repeat with the remaining batter. You can make the waffles ahead of time and re-warm (oven, grill or toaster – not the microwave), since they are best served warm. Served drizzled with maple syrup and topped with fresh berries.

Ingredients:
2 Eggs
2 tablespoons Oil or melted butter
3 tablespoons Milk of your choice
1 teaspoon stevia or other sweetener
1 teaspoon Vanilla extract
1 cup (95g) Ground almonds/almond flour
1/4 teaspoon Salt
1 teaspoon Baking powder
Butter/oil of choice for frying
Sugar free maple syrup
Directions:
1. In a large bowl, beat eggs, oil, milk and vanilla extract.
2. Add ground almond flour, baking powder and salt. Stir until combined.
3. Heat a skillet over medium-low heat, melt one tablespoon butter or oil.
4. Scoop about 1/4 cup of the batter, cook for 1-2 minutes, until golden brown at the bottom and bobbles appears on top, flip and cook for about 1-2 minutes more.
5. Serve!
