How To make Flatbread
1 1/2 cups warm water
1/2 teaspoon dry yeast
4 cups all purpose flour
1/2 teaspoon salt
2 tablespoons oil
Mix water and yeast and let stand 15 minutes. Gradually pour in 2 cups of the flour mixture and incorporate. Mix for about 1 minute to form a sponge. Let stand, covered for at least an hour. Put sponge in the bowl of a Kitchen Aid. Using the dough hook, add the salt and oil, then flour 1/2 cup at a time to form a dough. Remove from bowl and knead. Place in a clean oiled bowl and let rise, slowly, about 2 1/2 hours. Divide dough into three balls, let rise again for 1/2 hour and roll out.

Easy Flatbreads
Ingredients:
- 280g (9.9 oz) flour
- 1 1/2 teaspoons (tsp) baking powder
- 1 tsp salt
- 2 tablespoons (tbsp) olive oil, plus extra for rolling
- 1 tbsp honey
- Approximately 180ml (6 fl oz) water
Method:
1. In a mixing bowl, combine the flour, baking powder, salt, olive oil, and honey. Create a well in the centre.
2. Gradually pour in 3/4 of the water, mixing continuously. Add more water only if necessary to form a cohesive dough.
3. Once the dough comes together and no longer sticks to the sides of the bowl, turn it out onto a floured surface. Knead for 5 minutes, then return it to the bowl. Cover with a clean tea towel and let it rest for 30 minutes.
4. After resting, divide the dough into 6 equal portions and roll them into tight balls.
5. Lightly oil your work surface. Roll out each ball until it's about the size of a small dinner plate.
6. Heat a cast-iron pan over high heat. Cook each flatbread for 2-3 minutes on each side, or until they're nicely browned and puffed up.
7. Remove the flatbreads from the pan and let them cool slightly before serving.

Easy Soft Flatbread (No Yeast!)
Most flatbreads made without yeast are quite crispy so they crack when folded or rolled. These are so soft you can use them as wraps!
