How To make Whole Wheat Flatbread Chapati
2 1/4 cup Durum flour
1/2 ts Sea salt
1 tb Canola oil
2/3 c -Very warm water
Combine flours and salt in a large mixing bowl.
Mix in oil and water to form a stiff dough, adding more water if necessary. Remove dough from bowl and knead on a lightly floured surface until smooth, about 5 minutes.
Return dough to bowl, cover with a towel and set aside in a warm place for one hour.
Turn dough out onto a lightly floured surface and divide into 14 equal portions. Roll each piece into a ball and cover with a damp towel.
Heat an ungreased griddle or large frying pan over medium heat. Working with one ball of dough at a time, flatten it, then roll into a 6" circle, using only enough flour to keep dough from sticking. When griddle is hot, pick up dough, shake off excess flour and place it on a hot pan. Cook until brown spots appear, about one minute. Flip dough over and cook on other side. (Chapati may puff up while cooking.)
Cover and place in a warm oven while cooking remaining chapatis.

HINTS: Substitute durum flour with 1-1/2 cups whole wheat flour and 1 cup unbleached all-purpose flour.
Spread with margarine or butter after cooking to maintain moistness.

Ingredients used :
1. Wheat flour - 2 cups
2. Oil - 2 tablespoons
3. Salt to taste
4. Water
Steps :
1. In a large bowl, stir together the whole wheat flour, oil and salt. Use a fork to stir in the ingredients. 2. Add enough water to make a soft dough that is elastic but not sticky.
3. Knead the dough on a lightly floured surface until it is smooth.
4. Divide the dough into smaller portions.
5. Flatten the dough portions like a tortilla (6 - 8 inches in diameter)
6. On a heated skillet, put the flattened dough.
7. Cook until the underside has brown spots, about 30 seconds, then flip and cook on the other side. Continue with remaining flattened doughs.
Serve with honey/butter/chutney/gravy/ghee.

Wheat Flour ( Liquid Dough ) Chapati with Tips, Pros & Cons
This chapathi takes 10 minutes to roast ( one chapathi) First it looks like dosa after roasting for 5 minutes slowly it will turn into chapathi .
Recipe :
Whole Wheat Flour - 1 cup
Water - 1 & 1/2 cups
Salt
Oil - 1 Tablespoon
Procedure :
FirstMix wheat flour , water salt and oil with out any lumps , to prevent lumps sieve the flour first and mix well.
When pan is hot enough on medium high,
Pour ladle full of batter in to any non stick pan ( don't make round like dosa )
Just pour and leave .
Cook till the top layer is completely dried, then flip chapati to other side and cook for 1 minutes,
Again flip and cook 1 minute repeat this process until you see chapati rises up ( fluffy) it takes almost 8 minutes.
Note : can leave chapati' s, it will not be hard but the taste will change when it cools down.

whole wheat atta :4 cups
yogurt: 3 tbs
water :1 1/2 cups or as is required ,determined by the nature of wheat flour used
salt 1 tsp .
mix salt to the flour and add water little by little to obtain soft and pliable dough .
rest the dough in room temperature for 8 to 12 hours.
roll rotis and cook on a hot griddle.

Ingredients for making roti/chapati -
* 1 & 1/2 cups (standard measuring cup) whole wheat flour (chapati flour or atta)
* Little less than a cup of hot boiling water. Use the same cup to measure water in which you measured your flour. Please do not stick to this proportion of water strictly. Depending on the quality of the flour used you may need more or less water. Keep a bowl of warm water by the side while kneading. Dip your knuckle in the water and then press out the dough as shown in the video.
* 1/4 th teaspoon salt (optional)
* 1 teaspoon oil (optional but it helps to keep the rotis soft)
* I like brushing my rotis with little extra virging olive oil as soon as they are taken out of the tawa. You can apply ghee or butter or skip this step entirely but the oil keeps the rotis soft even if you want to store them for 2 days.
Store the leftovers in an airtight container in the refrigerator. Right before eating you can warm them up in a pan over low heat. You can even brush them with little water and microwave for 20 to 30 seconds.
Serve rotis with any curry of your choice or lentils.
