INGREDIENTS
1 packet (16 ounces) firm tofu OR silken tofu, drained
Kosher salt
Neutral oil
1 shallot, sliced thinly cross-wise
3 cloves garlic, sliced thinly length-wise
1/2 Thai red chile or similar, sliced thinly
2 scallions, cut into 2-inch segments, making sure white and green parts are separated
2 tablespoons light soy sauce
2 teaspoons abalone sauce
1 teaspoon rice wine (Mijiu or Shaoxing wine)
1/2 teaspoon granulated sugar
1/2 teaspoon MSG or mushroom powder
1 tablespoon potato starch

Crispy Pan-Fried Five Spice Tofu [ gluten-free + vegan]
This simple pan-fried tofu uses Chinese Five Spice. The mix varies slightly based on the region of China it comes from but the one I have includes cinnamon, cloves, star anise, ginger, and fennel. This aromatic combination imparts an rich aroma that reminds me of Chinese BBQ. I love it when I can get “meaty” flavours out of completely meat-less ingredients!

Where can you buy Chinese Five Spice? Find it in the ethic aisle of major supermarkets. Or track it down in Asian grocery stores. If all else fails, find it online. Here are some options from Amazon:
Using homemade tofu is best for this recipe, but if you don't feel like making it yourself, you can use medium to firm tofu. However, rinse your tofu well in fresh water, then press it to force out the excess water. Here's my easy homemade tofu tutorial that requires only plain soymilk, lemon juice and water:
RECIPE FOR PAN-FRIED CHINESE FIVE SPICE TOFU

Makes 1-2 servings
INGREDIENTS
4 oz (about 125g) firm tofu cut into bite sized pieces, 1/2 thick (about 1 cm)
1/2 tablespoon of cooking oil
Marinade:
1/2 tablespoon soy sauce
1 tablespoon maple syrup
Dry Coating:
1/2 tablespoon nutritional yeast
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon Chinese Five Spice Powder
DIRECTIONS
Blot the excess moisture from the tofu pieces.
Mix the soy sauce and maple syrup together for the marinade.
Toss the tofu pieces in the marinade gently and let rest for a few minutes.
Combine the dry ingredients.
Remove the tofu from the marinade, letting the excess liquid drip off.
Coat the tofu in the dry mix by gently pressing each side into the dry mix.
Heat a non-stick pan on high heat with a half tablespoon of cooking oil.
When the oil will start to shimmer when it is hot enough but not smoking. Place the tofu on to the pan and let cook for 20 to 30 seconds.
Turn the heat down to medium and allow the tofu to cook for another 30 seconds to a minute, or until the bottom is well browned.
Use a spatula or chopsticks to flip the pieces. Continue to cook on the other side for a minute or until that side is browned to your preference.
Remove the tofu from the pan, and let cool slightly before eating.

Shredded Pork with 5 Spice Tofu 香干肉絲 | Street To Kitchen Asia with Yu Tsai
This stir-fry is extremely common throughout Taiwan. Every restaurant puts its own spin on it, because the ingredients are completely flexible and easy to modify to your liking. Remove the meat and make it a vegetarian dish. If you can’t find Chinese chives, substitute with green onions. The Hakka style of this dish uses Chinese celery and seafood. Experiment and make it your own.

Ingredients
INGREDIENTS:
8 oz (227g) pork loin cut to strips
MARINADE:
2 teaspoons Shaoxing wine
1 teaspoon sesame oil
1/4 teaspoon white pepper
1/4 teaspoon cornstarch
pinch of sugar
1 tablespoon light soy sauce
STIR FRY INGREDIENTS:
1 tablespoon peanut oil
1/2 teaspoon dark soy sauce
4 cloves garlic minced
1 pack 5 spices pressed tofu sliced (4 pieces)
4 oz (113g) Chinese chives cut to 2 inches
2 scallion stalks diced
8 dried red chili peppers or fresh chili peppers (deseed if you don't like it too spicy)
salt to taste
Instructions:
1. Combine all the marinade ingredients, then, marinate pork for 15 to 30 minutes.
2. Heat oil in wok, add marinated pork and dark soy sauce. Cook until meat is white and cook thoroughly. Remove and set aside.
3. Heat oil, add garlic and warm to bring out fragrance.
4. Add sliced tofu. Stir for about 1 minute.
5. Add red chili pepper, white pepper, 1 tablespoon Shaoxing wine around the edge of the wok.
6. Add Chinese chives. Toss to combine for 15 seconds.
7. Combine with Pork and toss for 1 minute. (Be careful not to over cook the chives)
8. Turn off heat and add scallions.
Ready to serve over rice.
