How To make Five Dahl Soup
3 tb Mung beans
3 tb Pigeon peas
3 tb Yellow split peas
3 tb Green split peas
3 tb Chick peas
7 c Stock
1 ts Turmeric
1 tb Coriander
1 tb Shredded ginger root
3 tb Ghee
1 ts Salt
4 oz Fresh spinach
2 ts Whole cumin seeds
2 ts Minced green chilies
1 ea Bay leaf
1/8 ts Asafetida
1/4 ts Cayenne
1/2 ts Garam masala
2 tb Chopped coriander
Sort & wash the legumes. Combine in a bowl & soak in hot water for 1 hour. Drain. Combine the legumes with the stock, turmeric, coriander, ginger root & 1 tb of the ghee in a ;arge pot. Bring to a boil & simmer covered for 1 1/2 hours. Stir occasionally. Remove the pot from the heat, add the salt & beat with a whisk till the soup is quite smooth. Add the coarsely chopped spinach & cook gently for 10 minutes.
Heat the reamining ghee. When hot, add the cumin & chilies. Fry for 20 seconds then add the bay leaf, asafetida & cayenne. A few seconds later, add 3 tb water. Cook for a minute or so & then pour into the soup. Sprinkle in the garam masala & coriander & serve. Yamuna Devi, "The Art of Indian Vegetarian Cooking"

Moong Dal Soup | Sanjeev Kapoor Khazana
Thick creamy soup with the goodness of moong dal.
MOONG DAL SOUP
Ingredients
¾ cup split skinless green gram (dhuli moong dal), soaked and boiled
1 tablespoon oil
2-3 tablespoons butter
4 cloves
12-14 black peppercorns
1-2 fresh red chillies, cut into strips
½ inch cinnamon, broken
1 bay leaf
1 tablespoon chopped garlic
1 medium onion, finely chopped
1 medium tomato, finely chopped
1 medium carrot, boiled and finely chopped
Salt to taste
1 tablespoon fresh cream + for drizzling
Crushed black peppercorns to taste
2-3 tablespoons coconut milk
Fresh coriander sprig for garnishing
Method
1. Heat oil and butter in a non-stick pan. Add cloves, peppercorns, red chillies, cinnamon, bay leaf, garlic and onion, mix and sauté till onion turns translucent.
2. Add tomato and carrots, mix well and cook till tomatoes soften. Add salt and mix well.
3. Add green gram and mix well. Add some water, mix and cook for 1-2 minutes. Remove from heat and blend well with a hand blender.
4. Strain into another non-stick pan kept on heat and bring to a boil. Add 1 tablespoon cream and mix well.
5. Add crushed peppercorns and coconut milk, mix well and simmer for 1-2 minutes.
6. Transfer into a serving bowl, drizzle some cream on top, garnish with coriander sprig and serve hot.

Masoor dal curry soup, there is nothing more soothing than a bowl of this protein-rich curry soup on a cold day. Paneer and dal provide the necessary nutrients like protein and calcium required to be physically active. Cooked rice add good mouth feel. Add lemon juice just before serving, to relish its fresh taste and flavour.

Masoor Dal Soup
Preparation Time: 15 mins
Cooking Time: 25 mins
Makes 4 servings
Ingredients
1 tbsp oil
1/2 cup sliced onions
1/2 tsp finely chopped garlic (lehsun)
1/2 tsp chilli powder (optional)
3/4 cup chopped tomatoes
4 tbsp masoor dal (split red lentil)
salt to taste
For The Garnish
1/4 cup cooked rice (chawal)
lemon wedges
Method
1. Heat the oil in a pressure cooker, add the onions and sauté on a medium flame for a 1 to 2 minutes.
2. Add the garlic and chilli powder and sauté on a medium flame for a few more minutes
3. Add the masoor dal and tomatoes and saute for 1 to 2 minutes.
4. Add the salt, mix well and saute for 1 more minute.
5. Add 2½ cups of water, mix well and pressure cook for 2 whistles.
6. Allow the steam to escape before opening the lid.
7. Blend the mixture to a smooth puree and then strain using a sieve.
8. Transfer to a pan and boil for 5 to 7 minutes.
9. Serve hot garnished with rice and lemon wedges.
