4 Fish fillets 2 oz Butter 4 Spring onions; chopped 2 ts Dill weed 2 tb Lemon juice 4 tb Double cream Salt & Pepper Cut 2 squares of doubled foil large enough to wrap around the fish. Grease one side of each piece of foil, then arrange 2 fish fillets in the middle of each and top with equal amounts of the remaining ingredients, adding salt and pepper to taste. Bring the edges of the foil to the middle and join together to seal tightly. Place the fish parcels under a hot grill (broiler) for about 10 minutes. Easy Peasy Fish in a Parcel from Abel & Cole
Our fresh fish is sustainably caught on small day boats. We can trace every fish to the boat it was caught on, it'll never have been frozen. It's so fresh you can almost hear the sea. This recipe is about as easy as it gets and you can use pretty much any fish and any veg in this recipe. The more veg you use, the more you can make your fish stretch, so if you want to serve 4 with the 2 fillets, just up the veg anti. Quick, easy, delicious and hardly any washing up. Perfect.
