How To make Finska Pinnar(Finnish Fingers)
1/2 lb Butter or margarine
1/2 c Sugar
1 Egg -- separated
1/2 ts Vanilla
2 1/4 c Flour
Pearl sugar
Beat butter until creamy, then beat in sugar and egg yolk. Add vanilla. Gradually work in flour to form dough. Chill. Roll dough out into long ropes about 1/2 inch in diameter. Brush ropes with lightly beaten egg white, then cut into 2 1/2-inch lengths. Dip each in pearl sugar to coat. Place on greased baking sheets and bake at 350F 15 to 20 minutes. Finnish Shortbread Sticks With A Twist: Spelt Flour Cookies
Imagine a not-too-sweet melt-in-your-mouth cookie. This is Finnish Shortbread Stick Cookies called Finska Pinnar in Swedish; a popular butter cookie sold in most bakeries in Sweden. This is a classic shortbread butter cookie. Sue Maree P style I have changed the traditional recipes and created my recipe with a blend of ground almonds, white spelt flour, and little sugar. There are many recipes using only wheat flour and more sugar. I like the balance of almonds and spelt flour and not too sweet. I have made them both with unsalted and salted butter. Also if you don't have access to bitter almond essence add vanilla essence instead.

0:00 How to Make Finnish stick cookies with spelt flour
0:40 Blend all ingredients in a food processor or mix sugar and flour into the butter with your hands to form a dough
2:46 Blend for 3 x 30-second burst on high with the food processor

* Ground almonds – 35g, 1.2 oz (1/3 cup)
* Bitter almond essence – 3-4 drops
* Sugar – 35g, 1.2 oz (3 tbsp)
* Butter, softened – 200g, 7.1 oz (1/2 + 1/4 cup, together)
* White Spelt Flour – 250g, 8.8 oz (1 cup + 1/2 cup) maybe more for rolling
Brushing and decoration
* Egg white whisked – 1
* Chopped almonds – 1-2 tbs
* Pearl sugar or regular sugar – 1-2 tbsp

How To Make Finnish Sticks. A Quick and Easy Swedish Cookie Recipe
Finnish Sticks is a Swedish Cookie that dates back from the 1800's in Sweden. This Swedish Cookies is part of the Seven Kinds of Cookies or in Swedish Sju sorters kakor that are a must to both make and eat. This is an easy cookie recipe for beginners to make from scratch at home.
Ingredients:
2½ cups sifted flour
½ cup sugar
½ pound butter (slightly softened)
1 tsp almond extract
1 egg (slightly beaten)
½ cup finely chopped blanched almonds and pearl sugar
water optional
Instructions:
Combine the flour and sugar.
Cut in the butter using a pastry cutter or your hands. The mixture should form crumbs the size of a pea.
Sprinkle the almond extract over the top the dough. Knead the mixture lightly but well to distribute the flavoring.
Divide the dough into eight parts.
Roll the dough into long strips. Cut into 2-inch lengths.
Press the tops with your finger or knife to flatten slightly.
Place on an ungreased cookie sheet, spacing them about 1 inch apart.
Brush the tops with the beaten egg.
Sprinkle with the almonds and pearl sugar.
Bake in a 350°F oven for 12-15 minutes, or until a delicate golden brown.
Transfer to a wire rack and let cool.
Serve with milk, coffee, or tea
