How To make Pecan Fingers
3/4 c Powdered sugar
1/3 c Shortening
1/3 c Margarine or butter;
-softened 1 1/2 c All-purpose flour
1/2 ts Salt
2 Eggs
1 c Packed brown sugar
1 c Chopped pecans
2 tb All-purpose flour
1/2 ts Baking powder
1/2 ts Salt
1/2 ts Vanilla
Powdered sugar Recipe by: Betty Crocker's Microwave 1. Mix powdered sugar, shortening and margarine in large bowl thoroughly.
Stir in 1-1/2 cups flour and 1/2 teaspoon salt. Press mixture firmly in rectangular dish, 11 X 7 X 1-1/2 inches. Microwave uncovered on high 4 to 6 minutes, rotating dish 1/4 turn after 2 minutes, until no longer doughy.
2. Mix remaining ingredients; spread over hot layer. Microwave uncovered 6
minutes, rotating dish 1/4 turn after 3 minutes; cool completely. Sprinkle with powdered sugar. Cut into about 3 X 1-inch bars. 28 BARS; 145 CALORIES PER BAR. -----

These buttery, melt in your mouth, pecan cookies are a favorite of ours. They make a perfect Christmas cookie and are so easy to make!

Ingredients:
2 1/2 cups flour
3/4 cup sugar
1 cup softened butter
1 cup chopped pecans
1 1/2 tsp vanilla
about 1/2 cup powdered sugar to roll cookies in
Cream butter and sugar together. Add in vanilla and mix. Add in flour and nuts and mix until well incorporated and dough comes together. You can chill your dough to make it easier to work with or use right away. Form dough into crescent shapes and place on a greased or lined cookie sheet. Bake at 350 for 12-15 minutes. Once cookies are baked, allow to cool for a couple of minutes then roll in powdered sugar and set on a wire rack to fully cool. You can roll them again after they fully cool if you want.

Pecan Finger’s
Ingredients
2 sticks butter, room temperature
1/2 cup confectioners' sugar, plus more for coating baked cookies
1 teaspoon vanilla extract
1 3/4 cup flour
1 cup pecans, chopped very fine
Preheat oven to 275 degrees. Line baking sheets with parchment paper.
Using an electric mixer at low speed, cream butter and confectioners' sugar until smooth. Beat in vanilla extract. At low speed, gradually add the flour. Mix in the pecans.
With floured hands, take out about 1 tablespoon of dough, shape into a crescent. Continue to dust hands with flour, as you make and shape the cookies. Place them 1 inch apart on prepared baking sheets. Bake for 45 minutes.
Remove from oven and roll in additional confectioners' sugar while still warm. Cool completely on wire racks. Store in air tight containers.

Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make Pecan Tassies. I think of these cute little Pecan Tassies as miniature Pecan Pies. They make a nice addition to your holiday baking, and are especially good when you're having a large group over for dinner and want to serve your desserts buffet style. The pastry is unique as it contains cream cheese, which adds both flavor as well as making the pastry wonderfully tender and flaky. I love how the custard-like filling is sweet and gooey and has lots of crunchy pecans. Pecans Tassies store very well and can also be frozen.

Christmas Cookies - Grandma's Pecan Fingers
2 Cups flour
2 Cups chopped pecans
1 Tsp salt
2 Sticks room temp butter
1/2 Cup powdered sugar
3 Tsp water
1 Tsp vanilla extract
Mix all ingredients until dough is able to stay together when rolled. Roll into logs. Bake for 15-20 minutes at 325 degrees. Let cool then roll in powdered sugar and enjoy!
