Pumpkin Cream Cheese Muffins

Just like our favorite carrot cake with cream cheese frosting, these flavorful pumpkin muffins with a tangy cream cheese center are really a match made in heaven. The super moist crumb (quite tender) and cream cheese swirl and are the perfect way to start your day.
You’ll need:
Muffin:
• 1 3/4 cup all purpose flour
• 2 tsp pumpkin spice
• 1 tsp baking soda
• 1/2 tsp salt
• 1 (15 oz) can pumpkin puree
• 3/4 cup granulated sugar
• 1/2 cup packed light brown sugar
• 2 large eggs
• 1/2 cup vegetable oil
• 1 tsp vanilla extract
Cream Cheese Swirl:
• 4 oz cream cheese
• 1/4 cup granulated sugar
• 1 large egg yolk
• 1/2 tsp vanilla extract
Makes 18 muffins
:: HELPFUL HINTS::
* Measure your flour correctly. Adding too much flour will result to dry and crumbly texture of cupcakes when baked. Fluff the flour in the container before scooping it out. Lightly spoon the flour directly into the measuring cup until it mounds well above the top of the measuring cup. Using the back of the dinner knife (non-serrated side is facing the flour), sweep the knife over the top of the cup to remove the excess flour.
* If pumpkin spice is unavailable, you can make a DIY pumpkin spice. Just mix 1 tsp ground cinnamon, ½ tsp ginger powder, ¼ tsp ground cloves, ¼ tsp ground nutmeg (optional)

180 g All-purpose flour 1,5 cup

1 tbsp Baking powder
80 ml Vegetable oil 1/3 cup
150 g Sugar 3/4
2 Eggs
180 g Plain yogurt 3/4 cup
1/2 cup blueberries
1 tbsp All-purpose Flour
1 tsp Vanilla Optional

170 g Cream cheese 6oz
30 g Sugar 2,5 tbsp
10 g Cornstarch 1 tbsp
2 tsp Dried lemon zest You can add fresh lemon zest, lemon extract, orange or vanilla extract

????ingredients:
- 70 g (1/3 cup) soft butter
- 150 g (3/4 cup) cane sugar
- 1 tsp (5 g) vanilla
- 1/4 tsp (2 g) salt
- 180 g (3/4 cup) cream cheese (light or full fat)
- 2 medium eggs (100 g)
- 170 g (1+1/3 cups) all purpose flour
- 1 tsp (5 g) baking powder
Optional: 50 g (1/3 cup) chocolate chips (or dried fruits)
????????Instructions:
????Turn on the oven for 200 C (390 F). MODE: Upper and Lower heat
(180 C - fan forced)
✅ Using a hand mixer beat together soft butter, sugar, vanilla, salt about 1 minute, just to combine.
✅ Add cream cheese (not cold!), beat to combine and creamy, without lumps.
✅ Add eggs, 1 at a time, mixing well after each addition
✅ Sift in flour and baking powder, mix just to combine. Do not overmix!
✅ Fold in chocolate chips (or any other add-ins for your taste).
✅ Fill the muffin tins full. Divide the batter evenly between 9 muffin cups.
✅ Bake for 20-30 minutes or until the tops are lightly golden brown and centers are set. Stick a toothpick in the center of a muffin to test for doneness. If it comes out clean, the muffins are done.
✅Let cool & enjoy!

Cream Cheese–Filled Banana Bread Muffins
Here is what you'll need!
Ingredients
Bread
1 large egg, beaten
1/2 cup light brown sugar
1/4 cup granulated sugar
1/2 cup butter, softened
1/4 cup sour cream (Greek yogurt may be substituted)
1 teaspoon vanilla extract
2 ripe bananas
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Cream Cheese Filling
1 large egg
4 ounces softened cream cheese (1/2 block)
1/4 cup granulated sugar
3 tablespoons all-purpose flour
Instructions
1. Preheat oven to 350F (180C)
2. To prepare the bread, combine egg, sugars, butter, sour cream and vanilla in a large mixing bowl. Whisk together. Add the bananas and mash together.
3. Add flour, baking powder, baking soda and mix lightly to combine. Set aside.
4. To prepare the cream cheese filling, mix egg, cream cheese, sugar, and flour in a small bowl.
5. To assemble the muffins, spoon a layer of bread batter into a greased muffin tin. Then spoon a layer of cream cheese filling, then top off with another layer of bread batter.
6. Bake for 20-25 minutes. Baking times may vary. Muffins are done when a tooth pick inserted in the center comes out clean.
7. Allow muffins to cool for 15 mins.
8. Enjoy!

Enjoy them while warm or once completely cool down, either way these muffins are delicious and stay moist up to 5 days
✅sift all ingredients after mixing them together the sugar goes through better ???? you want the dry ingredients to be as smooth as possible
✅you can get 6-8 jumbo muffins or 12 regular size muffins
✅bake at 350 for 25 minutes
