How To make Fig Newton Bars
3 c Flour, sifted
1/2 ts Salt
1/2 ts Cinnamon
2/3 c Butter or margarine
1/2 c Brown sugar - dark, firmly
Packed 1/2 c Brown sugar - light, firmly
Packed 2 Egg whites
1 ts Vanilla
**** FIG FILLING **** 3 c Figs, fresh, finely chopped
(see note) 1/4 c Water
2 tb Sugar
2 tb Lemon juice
Sift flour with salt and cinnamon. Cream butter and sugars until very fluffy; beat in egg whites and vanilla. Slowly work in flour; wrap dough and chill 2 to 3 hours. Meanwhile, prepare filling. Simmer the ingredients together, stirring frequently, 5 to 7 minutes until thick. Cool but do not chill. When dough has chilled long enough, preheat oven to 350 degrees. Roll out dough, a small portion at a time, 1/4 inch thick and cut in pieces about 2 1/2 inches wide and 3 inches long. Place a level teaspoon of fig mixture in the center of each and fold dough around filling as though folding a business letter. Flatten cookies slightly and place seam down 1 inch apart on ungreased baking sheets; bake about 12 minutes until lightly browned and just firm. Cool on racks. Donna picks fresh figs from her garden and makes her blue ribbon winning fig bars!
Ingredients:
Dough
1 cup butter, softened
¾ cup sugar
¼ cup brown sugar
2 cups flour
¼ teaspoon salt
Filling
4 heaping cups fresh figs
½ cup sugar
Lemon juice from half a lemon
Lemon zest
¼ teaspoon cinnamon
Directions:
Wash the figs and cut the stems. Cut figs in half and place in a 2-quart pot. Add ½ cup sugar and ¼ cup water. Add the juice and zest from ½ a lemon. Bring mixture to a boil and simmer for 15-20 minutes. Cool. Add cinnamon. Purée figs in a blender.
Preheat the oven to 350F. Lightly grease a 9x13 pan, then line with foil that overhangs the edges of the pan.
In a medium mixing bowl cream together the butter, sugar and brown sugar until light and fluffy. Blend in the egg yolk, then the flour and salt. Divide the dough and press ½ on the bottom of the baking pan. Spread 2 cups of the cooled fig purée on top of the dough. Crumble the remaining dough mixture on top of the fig purée.
Bake for 45 minutes.
Cool in pan before slicing. If desired you can drizzle icing on top by combining 1 cup powdered sugar with 2 drops of vanilla and enough milk to make a thin icing.
Alternatively, you can use an 18 ounce jar of your favorite jam or preserves for the figs.

Fig Newtons -Gluten Free
Fruit Filling
Dehydrate fruit by spreading out mashed figs on a cookie sheet. We use a quart of our canned figs, drained, mashed with no sugar added. If you have fresh, mash and they are ready. Add sugar or honey to taste, if you want. Bake 1 hour at 300 degrees and 30 minutes to an hour at 200 degrees. Keep a check because you do not want it brittle, just rubbery. You can also make fruit leather with a dehydrator. Let cool.
Pastry Crust
1 ½ cups Gluten Free flour ½ teaspoon salt 1 teaspoon baking powder
¼ cup softened butter 1/3 cup sugar 1 beaten egg
3 tablespoons milk (almond) ½ teaspoon vanilla
Mix egg, milk, vanilla together. Mix flour, sugar, butter, together.
Add both mixtures and get consistency of pie crust. With gluten free you will have a different texture. I used my hands to press it all together. Divide into 4 pieces. Gluten free pastry can’t be rolled out like regular crust. I took 2 pieces of wax paper, and rolled them out. Do not get them too thin. Roll them in long strips. Cut about 3 inch strip. Place a piece of fruit leather on one end and roll up pastry. Use about 1 tablespoon of fruit. Any fruit leather will work.
Bake 15 minutes at 350 degrees or until lightly brown. Do not overcook.
Cool and enjoy.

Heathy No Bake Fig Newtons
INGREDIENTS:
For the crust:
1 3/4 cup fine almond flour - Mine is by @prozis
1 ½ c oat flour - I used the @prozis oat powder - ???? Code KATIE10 for 10% off
1 tbsp coconut oil ,melted
1/3 cup sugar free maple syrup - I like @lank
2 tbsp orange juice
1/2 tsp salt
Little bit of orange zest (optional)
Fig Filling:
7 oz of dried figs, soaked in warm water for 30 minutes
3 tbsp orange juice
1 tbsp sugar free maple syrup
1/2 tsp cinnamon
Pinch of salt
INSTRUCTIONS:
Before you start preparing your fig newton cookie crust, soak 1 ½ c. dried figs in water for 30 minutes. Make sure the water covers the figs by at least 1 inch.
For the Crust:
1. In a large bowl, whisk together both flours. Add in the coconut oil, syrup, salt, and orange juice to the bowl and mix until fully incorporated and a dough forms.
2. On a long piece of wax paper or parchment paper, roll out your cookie crust mixture. Roll the mixture out to a long rectangle (about 9x14 inches). The cookie crust should be about 1/4 inch thick. Refrigerate the fig newton crust while you preparing the fig filling.
For the Fig Filling:
1. Drain figs & place all other filling ingredients in a food processor until almost smooth, but still slightly chunky.

Recipe: Homemade Fig Newtons in Bar Cookie Form from Fresh Figs
I love fig newtons. But they are not available in Germany. So, I had to learn to make them myself. These taste amazing. Enjoy!
Fig Newtons:
For the Fig Jam:
500g (about 8) fresh figs
1/2 cup (100g) brown sugar
1/4 tsp salt
1 tsp vanilla extract or 1 tbsp vanilla sugar
1 tbsp lemon juice
For the shortbread crust:
1 1/2 cups (190g) flour
1/2 cup (60g) powdered sugar
2/3 cup (170g) butter
1/2 tsp vanilla extract or 1/2 tbsp vanilla sugar
1/4 tsp salt
To make the jam, cut the tips off the figs, quarter the figs, place them in a medium saucepan and add the rest of the ingredients. Bring to a boil over medium heat. Reduce heat and allow to simmer for 45 minutes to an hour or until the amount of liquid reduces to about half. Puree the remaining fruit pieces in a blender or hand mixer.
For the crust, combine dry ingredients in a large mixing bowl, cut in butter and continue to combine until a cohesive dough forms. Take half the dough and press it into a the bottom of a six-inch baking pan. Pour jam on top. Press remaining dough into the size and shape of the top of the baking pan. Place it on top of the fig jam. Bake at 350°F or 180°C for 35-40 minutes or until top crust is a golden brown.
