How To make Fig Newton Bars
3 c Flour, sifted
1/2 ts Salt
1/2 ts Cinnamon
2/3 c Butter or margarine
1/2 c Brown sugar - dark, firmly
Packed 1/2 c Brown sugar - light, firmly
Packed 2 Egg whites
1 ts Vanilla
**** FIG FILLING **** 3 c Figs, fresh, finely chopped
(see note) 1/4 c Water
2 tb Sugar
2 tb Lemon juice
Sift flour with salt and cinnamon. Cream butter and sugars until very fluffy; beat in egg whites and vanilla. Slowly work in flour; wrap dough and chill 2 to 3 hours. Meanwhile, prepare filling. Simmer the ingredients together, stirring frequently, 5 to 7 minutes until thick. Cool but do not chill. When dough has chilled long enough, preheat oven to 350 degrees. Roll out dough, a small portion at a time, 1/4 inch thick and cut in pieces about 2 1/2 inches wide and 3 inches long. Place a level teaspoon of fig mixture in the center of each and fold dough around filling as though folding a business letter. Flatten cookies slightly and place seam down 1 inch apart on ungreased baking sheets; bake about 12 minutes until lightly browned and just firm. Cool on racks. NOTE: If fresh figs are not available, substitute 2 cups finely chopped dried golden figs and increase water to 1 cup. : Submitted by: Pat Stockett : Area: INTL. HOW DO THEY PUT THE FIG IN THE FIG ROLL!? We had a go at making some homemade fig rolls, this is a recipe from our very first book. We used to love eating fig rolls growing up, in Ireland the store bought ones are actually vegan! Accidentally. But our ones are much healthier containing only 5 ingredients! Give them try and let us know what you think.
All the best,

Our Road by Vexento:
Home-made Fig Newtons
For Dough:
1 cup butter softened
3/4 cups granulated sugar
1 egg
1/8 teaspoon salt
3 cups all-purpose flour
For Filling:
16 ounces dried figs, woody stems removed
1/2 cup granulated sugar
1 cup water
Juice of 1 lemon (1/2 cup)
For Egg Wash:
1 egg whisked with tablespoon of water.
Make Dough:
In bowl beat butter and sugar until light and fluffy, making sure to scrape down sides of bowl. Slowly add egg and beat together. Add salt and flour and mix you may want to finish mixing by hand.
Wrap dough in two layers of plastic wrap and refrigerate at least one hour
Make Filling:
Finely chop figs, if you want the filling to to be smooth, coarsely chop if you don't mind a chunky filling
In medium saucepan, combine figs, sugar, water, and lemon juice. Place over medium-low heat and cook until figs are tender and liquid is absorbed, about 10 minutes. Set aside to cool.
Assemble and Bake Cookies:
Preheat oven to 350 degrees.
Divide dough in 4 pieces and roll each piece nto a roughly 6- by 12-inch rectangle. Place dough rectangles on parchment-paper-lined baking sheets. Brush edges with egg wash. Spread quarter of filling along center of each rectangle then fold edges up to form a log and press to seal. Roll each log over so that seam is on the bottom. Brush each log with egg wash.
Bake logs until nicely browned, about 15 to 25 minutes depending on your cookie sheet and oven. Remove from oven cool slightly and slice into small bars.
NOTE:
Found the original recipe on epicurious and have altered it slightly.
The original recipe called for dividing the dough into two logs and making very big fig newtons. I divided mine into four.

Fig Filling:
7 oz of dried figs, soaked in warm water for 30 minutes
3 tbsp orange juice
1 tbsp sugar free maple syrup

Before you start preparing your fig newton cookie crust, soak 1 ½ c. dried figs in water for 30 minutes. Make sure the water covers the figs by at least 1 inch.
For the Crust:
1. In a large bowl, whisk together both flours. Add in the coconut oil, syrup, salt, and orange juice to the bowl and mix until fully incorporated and a dough forms.
