Christmas Cranberry Meatballs with Michael's Home Cooking
Cranberry Meatballs are sweet sour and perfect for special holidays.
Ingredients:
1 pound ground beef
1 pound ground pork
1/3 cup ketchup
2 eggs beaten
1 cup bread crumbs
2 Tablespoons minced dried onion or 1/4 cup MINCED onion
2 Tablespoons soy sauce
1/2 cup dried cut up cranberries
1/2 teaspoon salt
1/2 teaspoon pepper
1 or 2 Tablespoons dried parsley
Sauce:
1 - 14oz can Cranberry Jelly Sauce
2 or 3 Tablespoons brown sugar
1 cup ketchup
1 or 2 Tablespoons lemon juice (2 tbs is better)
Mix all ingredients (except sauce ingredients) and then make your meatballs.
I baked my approximately 1 inch meatballs for 20 minutes at 350F.
While the meatballs are baking, combine all your sauce ingredient except lemon juice and start on low heat to slowly bring up sauce to a simmer.
Take your time with this as the meatballs will be in the oven for a while.
Add your cooked meatballs to the sauce and simmer slowly for 15/20 minutes, then add your lemon juice.
Some parsley on top of the finished meatballs looks nice against the deep red sauce.
You can use all ground beef or all ground pork if you wish.

Canola Oil for Frying
Green Onion for Garnish
Toasted Sesame Seeds for Garnish

Yuzu Honey Glaze
1/4 Cup Yuzu Honey Tea (Can sub any marmalade or light jam like apricot)
1 Tbsp Gochujang
1 Tbsp Rice Vinegar
3 Tbsp Soy Sauce

► INGREDIENTS
500g minced beef
2 eggs
1 carrot (shredded)
1 onion (minced)
2 tbsp parsley (minced)
1 tsp of garlic powder
1 tsp of black pepper
2 tsp of salt
1/4 cup dried cranberries (chopped)
1/2 cup bread crumbs

275g whole cranberry sauce
3/4 cup tomato sauce
1 small onion (chopped)
1/2 cup beef broth
3 tbsp brown sugar
2 tsp apple cider vinegar

INGREDIENTS
1 lb. ground beef
1 Egg, lightly beaten
1/2 c. panko breadcrumbs
2 cloves garlic, minced
2 tbsp. finely chopped chives
kosher salt
Freshly ground black pepper
1 c. barbecue sauce
1 (14-oz.) can cranberry sauce
1 tsp. chili powder
1 tbsp. olive oil
Chopped parsley, for garnish
DIRECTIONS
1. Make meatballs: In a large bowl, combine beef with egg, panko breadcrumbs, garlic, and chives. Season with salt and pepper. Roll into small balls, about the size of ping pong balls.
2. Make sauce: In a medium bowl, whisk together barbecue sauce, cranberry sauce and chili powder.
3. In a large skillet over medium-high heat, heat olive oil. Add meatballs in a single layer and sear on all sides, about 2 minutes per side.
4. Pour sauce into the skillet and let meatballs simmer in sauce until cooked through, about 10 minutes. Reduce heat if the sauce is boiling to rapidly.
5. Garnish with parsley and serve warm.

INGREDIENTS
For the meatballs:
- 1 lb ground beef
- 1 lb ground veal
- 1 cup dried breadcrumbs
- 2 large eggs, beaten
- 1 cup ricotta cheese
- 1/2 medium onion, grated
- 3 cloves garlic minced
- 1 cup grated Parmesan cheese
- 1 1/2 tsp kosher salt
- 1 tsp black pepper
- 2 tsp dried Italian seasoning
- 2 tbsp olive oil
For the sauce:
- 2 tbsp olive oil
- 1/2 medium onion, grated
- 4 cloves garlic, thinly sliced
- 1/2 tsp red pepper flakes
- 1/2 tsp black pepper
- 1 tsp kosher salt
- 6 leaves fresh basil
- 2 15-oz cans crushed tomatoes
INSTRUCTIONS
For the meatballs:
- Preheat the oven to 425℉.
- In a large bowl, combine the ground beef, ground veal, dried breadcrumbs, eggs, ricotta cheese, grated onion, minced garlic, Parmesan cheese, kosher salt, black pepper, and dried Italian seasoning. Mix the ingredients well to ensure all of the meat and ingredients are well combined with no pockets of non-incorporated ingredients.
- Portion into 8 large meatballs and place them on a parchment-lined baking sheet. Drizzle with the olive oil.
- Place the meatballs in the preheated 425℉ oven and roast until they are beginning to brown, 15-20 minutes. Turn the heat down to 375℉ and bake until the internal temperature reaches 145℉, 18-24 minutes. While they are roasting and baking, prepare the sauce.
- Once the sauce is prepared and the meatballs are roasted, add the meatballs to the sauce. Spoon the sauce over the meatballs and return them to the oven to finish roasting until the internal temperature reaches 160℉, 10-12 minutes. Once finished, remove the basil leaves, top with freshly grated Parmesan cheese, and serve.
For the sauce:
- In a large oven-safe skillet or braiser, warm the olive oil over medium heat. Add the onion and garlic. Sauté until the garlic is beginning to brown, 4-6 minutes. Turn the heat down to medium-low as needed to make sure the garlic doesn't burn.
- Add the red pepper flakes, black pepper, kosher salt, tomatoes, and basil. Bring to a boil and reduce to a simmer. Simmer the sauce for 15 minutes.

VEGAN Holiday Meatballs With Gravy - Perfect for the Holidays
It’s the most wonderful time of the year, and in our house, we are busy cooking. Today I invited mom to join me in cooking one of our favorite Holiday Vegan Meat Substitutes. As we were growing up, we would have something called “Festboller” for the Christmas meal. They are wonderful little meatballs in a flavorful sauce, usually served with mashed potatoes, and all the trimmings for the Holiday meal, but though they were vegetarian, they were not vegan. As we became more committed to a plant based diet, we longed for a substitute for these wonderful Holiday meatballs. So we set about recipe testing. It took many tries, too many to list here, but we came up with this version, and I think they are absolutely awesome. I prefer these Vegan Holiday Meatballs in the recommended gravy, but they are also wonderful just browned in the skillet or served with our Holiday gravy.
