Orange Cranberry Bread is made with oil and yogurt which creates an incredibly moist and flavorful cake. This quick bread tastes of bright citrus that is balanced with tart cranberries and then topped with a sweet orange glaze. A dessert or breakfast that is very easy to make and no mixer is required.

Cranberry Orange Bread ~ Christmas Baking ~ Quick Bread Great For Gifting ~ Cointreau

Impress your family and friends with this delicious, fun and festive quick bread. Make it special for the holiday season by adding Cointreau to the batter.
2 c. AP flour
1 c. sugar
1 1/2 t. baking powder
1/2 t. salt
1-2 T. orange zest (I used the zest of 2 navel oranges)
1/2 c. fresh squeezed orange juice
1/2 c. milk
1/2 c. oil
2 eggs
1-2 t. pure vanilla extrac
1 t. cointreau or other orange flavored liquor (optional but delicious)
1 1/2c. Fresh cranberries
Glaze:
1/2-1 c. powdered sugar
orange juice to desired consistency for drizzling
1 t cointreau or other orange liquor, optional

CRANBERRY WALNUT BREAD | Festive Quick Bread | DIY Demonstration Recipe
Moist CRANBERRY WALNUT BREAD!! A festively quick bread for the holiday season!! Easy to make, yet simply delicious!! Recipe below...
CRANBERRY WALNUT BREAD
Preheat oven to 350 degrees F.
Grease and flour (2) 8 by 4 loaf pans. Set aside.
1-1/2 cups butter, softened
1-1/2 cups sugar
3 eggs
1 cup (8 ounces) sour cream
1 teaspoon pure vanilla extract
1 teaspoon pure lemon extract
3 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
2 cups whole cranberries, rinsed and dried
1/2 cup pecans, chopped
1. In a medium mixing bowl whisk together all-purpose flour, baking powder, baking soda, and salt. Set aside.
2. In a large mixing bowl add butter and sugar. Beat on medium-high speed for 1 minute. Add eggs. Beat until well blended. Add sour cream, vanilla and lemon extract. Beat until light and fluffy. About 1 minute.
3. Add 1/3 flour mixture, at a time, and beat until well blended.
4. Fold in cranberries and nuts.
5. Add bread batter evenly into prepared loaf pans.
6. Bake for 1 hour, or until toothpick inserted into middle come out clean.
7. Cool in baking pan 5 minutes before removing to cooling rack.
TIPS: Store cooled CRANBERRY WALNUT BREAD in an airtight container for up to 2 days, or freeze in plastic wrap and foil for up to 2 months.

3 Eggs
Sugar 125g (½ cup, 2 tablespoons)
Vanilla extract 1 teaspoon
Almond essence ½ teaspoon (optional)
Lemon zest 1 teaspoon
Melted Butter 150g (⅔ cup)
Plain Yogurt 45g (3 tablespoons)
Baking powder 1 teaspoon
Plain flour 200g (1 ⅓ cups)
Dried Cranberries 100g (about ½ cup)
Powdered Sugar 50g (½ cup)
Milk or Lemon juice 1 tablespoon
Measuring cup size - 240ml
Baking pan 21x11x6 cm
Bake in a preheated oven at 170c (338f) for 40-45 minutes
