Eggplant 400 grams
Ripe tomatoes 200 grams
Low-moisture mozzarella 100 grams
Parmigiano cheese to taste
Basil 2 leaves
Dried oregano to taste
Extra virgin olive oil 8 tablespoons
Salt to taste
Cut the aubergine into slices about 1 cm thick then heat-up a generous amount of extra virgin olive oil in a preferably non-stick pan, add the egglpant slices and brown over medium-high heat until golden brown, about 3-4 minutes per side, then drain the excess oil.
Cut the tomatoes into cubes and put them in a bowl, add some basil leaves chopped by hand, 1 tablespoon of oil, dried oregano and season with salt, mix everything and set aside.
Place the eggplant slices to a baking tray lined with parchment paper, seaon them with salt them and place on each slice about a tablespoon of the chopped tomatoes and a few cubes of mozzarella, add a sprinkling of grated Parmesan cheese and dried oregano to taste.
Put in a static oven at 200 °C - 390 °F for about 10 minutes, or until the mozzarella is completely melted, complete with 5 minutes of grill at 220 ° C - 430 °F.

酥锅的做法步骤:
1.猪肘子和猪蹄先烧汗腺;排骨浸泡1小时,去血水;干海带泡发至柔软, 卷成卷用棉绳捆起来;鱼切大段;取一些大白菜帮;藕去皮,切厚片;大葱切大段;生姜切厚片;炸豆腐泡准备好。
2.花椒,八角和桂皮装进茶包备用。
3.调酥锅汁:混合酱油,陈醋,料酒和白糖,醋与酱油的比例是1.5:1。尝一下味道,如果酱油不够咸,加一点点盐或者老抽。
4. 装锅:平底大锅下面放盘子防止糊锅;铺上大白菜叶;上面依次放排骨、⅓ 葱姜、调料包、海带、肘子和蹄子、⅓ 葱姜、藕、鱼、⅓ 葱姜、豆腐泡。锅的侧面都用白菜叶围起来。从最上面浇入调好的酥锅汁。盖上大白菜叶。食物应高出锅10cm左右。盖上锅盖,压上倒扣的蒜臼子。
5.大火烧开,大约30分钟后,食物高度回落,可以盖上锅盖了。转小火咕嘟2-3个小时,具体看食材多少和性质。
6. 关火,放凉;揭掉最上面的白菜叶,浇上香油;最好冷吃,也可以加热食用。
7. 冰箱冷藏保存3天,随吃随取。吃不完的可以冷冻。
