Bubble and squeak is a traditional British dish made with the shallow-fried leftover vegetables from a roast dinner. The main ingredients are potato and cabbage, but carrots, peas, Brussels sprouts, or any other leftover vegetables can be added. The chopped vegetables (and cold chopped meat if used) are fried in a pan together with mashed potatoes or crushed roast potatoes until the mixture is well-cooked and brown on the sides. The dish is so named because it makes bubbling and squeaking sounds during the cooking process. It is often served with cold meat from the Sunday roast, and pickles or brown sauce, or as an accompaniment to a full English breakfast.
The meat was traditionally added to the bubble and squeak itself, although nowadays it is more commonly made without meat. The earliest known recipe was by Maria Rundell in 1806.
The name bubble and squeak is used throughout the United Kingdom, and it may also be understood in parts of some other Commonwealth countries and the United States.
Bubble and squeak was a popular dish during World War II, as it was an easy way of using leftovers during a period when most foods were subject to rationing.

Shepherd's Pie - no shepherds or beef in this pie - just lamb! Traditional British dish.
Shepherd’s Pie is a traditional food of the British Isles. Of course, there are no shepherds in this pie but shepherds have reared the sheep and brought the sheep to market, so we can enjoy the distinct flavor of lamb. If you have eaten Shepherd’s Pie at a local restaurant you will find that the meat is ground beef and should then carry the name “Cottage Pie.” Also, in England they tend to use the word “minced” instead of “ground” when talking about the way a meat is prepared by the butcher and displayed in the supermarket. The plain flour in the original recipe has been adapted to the American “all-purpose flour.” Many of the English recipes are written in metric weights, e.g. 150 ml, 15 ml, rather than the cups and ounces we use in America. (To convert any recipes go to For demonstration purposes the weights used will be American pounds, cups and spoons.
Once you try the delicious flavors of Shepherd’s Pie, you will be asking for more.
Equipment needed. To begin this recipe you will need the following pieces of equipment:
• 9” x 9” baked glass baking dish
• 11” (5 quarts) Stainless steel frying/sauté pan, or non-stick frying pan -
• 3 qt. cooking pot
• Measuring jug, showing cups/ounces
• Measuring spoons
• Sharp knife
• Potato peeler
• Spatula
• Serving spoon
Ingredients. Before preparing the dish of Shepherd’s Pie you will need the following ingredients:
• 1 small onion
• 1 lb. ground or sliced lamb
• 1 tablespoon olive oil (canola oil or vegetable oil – your preference)
• 1.1/2 tablespoons all-purpose flour
• 2/3 cup brown stock (beef stock)
Quick tip/Key ingredient - made from Oxo cubes (found on the International aisle at the supermarket) and 2/3 cup water).
• 1 tablespoon chopped parsley – fresh or dry
• A pinch of marjoram – (use index and thumb and grab the marjoram between your fingers) Quick tip - you will find this herb in the baking aisle or fresh from a market).
Note – this is a key ingredient, it will add flavor to the dish.
• 1 teaspoon Worcestershire sauce
• 1 lb. cooked, mashed and buttered potatoes. Quick tip - if you do not have time to peel potatoes, prepare a 1lb 8oz bag of frozen potatoes and prepare according to instructions. This cuts down on preparation time.
Optional - add shredded cheese to give another dimension to the flavor.
• 1 1b. bag of frozen mixed vegetables (pea, carrot, corn blend)
• Salt and pepper to taste
• 12 oz. Beef gravy
Preparation. All the ingredients have been checked off and all the necessary items are in place, now we are ready to prepare Shepherd’s Pie.
1. Preheat the oven – 350oF or Gas Mark 4 (Moderately warm oven)
2. Brown the onion and the ground lamb in the 1 tablespoon of oil. When you see the meat is looking like a grilled hamburger, your meat is “brown.”
3. While the meat is cooking, prepare the stock:
Boil 2/3 cup of water, then add the Oxo cube and stir.
This will result in a brown stock, called beef stock in America.
4. Add the stock, to the meat and vegetable mixture and simmer (by lowering the heat), and cook for an additional two minutes.
5. Add 1.1/2 tablespoons of flour, stir occasionally, and cook for a minute or two. (This will help to absorb some of the juices from the meat and thicken the stock).
6. Add the dry ingredients: marjoram, parsley, Worcestershire sauce.
7. Stir all the ingredients. Then put this mixture in the 9” x 9” glass dish.
8. Add the frozen vegetables and season with salt and pepper.
9. Add the cooked, mashed and buttered potatoes, by spooning over the meat and vegetable mixture.
10. Use a fork to press down the potatoes, drag the fork across the potatoes to make lines. Add some butter slices on top of the pie to help it to brown. (These two steps will create a design on the potatoes).
11. Now, place in the preheated oven for 45 minutes (put the timer on) until the potatoes are nicely brown on top.
12. After 45 minutes allow the dish to cool for a few minutes (makes it easier to serve), then use a knife and divide the dish into four or six portions. Lift the portion, with a spatula, by placing spatula under one edge of the portion, slide spatula underneath, then lift out onto a dinner plate.
To plate this dish add perhaps some cooked broccoli spears and for gravy use a store bought beef gravy. Delicious! Enjoy!
Note: For a variation use beef for Cottage Pie, or parsnips instead of mashed potatoes to create Vicarage Pie.
