Prepare tortillas-two per serving-as you do for soft tacos. On tortilla place pieces of shredded chicken breast and some cut up green chiles. Roll up and place folded side down on serving plate. Spoon hot tomato sauce over enchiladas and top with sour cream. TRADITIONAL RED ENCHILADA SAUCE
**Red Enchilada Sauce**
8 dried guajillo chiles (55 g)
small piece of onion
1 clove of garlic
2 tsp (7 g) chicken bouillon powder
salt to taste
1 1/4 to 1 1/2 cup water or soaking liquid
**Makes 1 3/4 to 2 cups of sauce
ENCHILADA CHILI GRAVY SAUCE
1/4 cup (59 ml) cooking oil
1/4 cup (35 g) all-purpose flour
2 Tbls (12 g) chili powder
1/4 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
1 Tbsp (10 g) chicken bouillon
2 cups (473 ml) water
**Makes at least 2 cups of sauce
