Tex Mex Chili Gravy! (Enchilada sauce)
The BEST EVER Homemade Enchilada Sauce! This Tex Mex Chili Gravy will make your enchiladas taste even better than a restaurant's!

Ingredients:
1/4 cup oil or butter (can use canola or olive oil)
1/4 cup all purpose flour
1/2 teaspoon ground black pepper
3/4 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons ground cumin
1/2 teaspoon dried oregano
1 tablespoon chili powder
2 cups beef broth (can sub with another type) use a LOW or NO SODIUM
1 tablespoon tomato paste
Directions:
1. Heat the oil or butter in a medium size skillet over medium heat.
2. Add in the flour and stir to mix. Will be a thick mixture. Allow this to cook for just 1-2 minutes.
3. Add in the spices. Stir to form a thick paste.
4. Stir in the broth and tomato paste. Stir until smooth. Continue to heat over medium/low heat while whisking until sauce is thickened slightly.
5. Pour into a jar to store or use to make enchiladas. This sauce can be stored for up to 5 days.

8 oz American processed cheddar cheese
**You can use the cheese of your choice
7 corn tortillas
2 Tbsp (15 ml ) cooking oil
2 Tbsp (20 g) all-purpose flour
1 to 1 1/2 tsp light chili powder
1 1/4 tsp chicken bouillon powder
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp ground cumin
1 cup (236.5 ml) water
8 x 12-inch baking dish

Tex Mex rocks in San Antonio -- plain and simple! Some of the best you'll find in the entire country comes from our own backyard. Undoubtedly, an icon for Mexican food in town is Mi Tierra. Open twenty four hours a day, seven days a week, the folks here have been servicing hungry stomachs in the Alamo City for nearly 71 years! People travel far and wide for legendary their enchiladas; symbolic items according manager Gerardo Carvajal that everybody loves! There's truly something to be found for all palates...including these delicious vegetable enchiladas.
We're talking terrific sauces for the Green Chicken Enchiladas (Tomatillo made from scratch) and a marvelous mole that I love. The combinations of chocolate and peppers with sesame in the latter really set the stage. The Tex Mex Enchilada is their most popular, however, with loads of melted sharp cheddar cheese over steaming tortillas and ground beef. You can't get any more authentic than that!

This red chile sauce is so versatile, so delicious, and so easy to make. This sauce is awesome because at its base, it can be used on so many different dishes, from enchiladas to tamales to menudo and so much more. All you got to do is start with this base, and then you can tweak it in any direction, probably as many different sauces as there are chilies, and that's not even taking into account that every single house is going to do it a little bit different.
So whether you're in Texas, New Mexico, Mexico, or along the frontera or anywhere in the USA, remember my advice, what Arnie takes always says, ain't no right way, ain't no wrong way to make chili sauce, and don't let nobody tell you you can't do it the way you like it.
Maybe what your grandma taught your mom, what my grandma taught my mom and my mom taught me may not be exactly the same, even if they're similar, but of course, my grandma's is better than yours. Just kidding! Don't get mad!
Let me just cover real quickly the couple of the different chiles I have. Now, the package here says cascabel or guajillo. It doesn't mean they're the same thing because they're not, but it means you might get one or the other in this package or possibly both. We also have some ancho chile, and we also have some pasilla chile. And I also have some chile de arbol down here. We use that one in our red chili sauce just to give it a little hint of heat and a little more complex flavor.
All right, so in the recipe we're going to use 15 guajillo/cascabel chiles, a couple of ancho chiles, and probably about four or five of the chile de arbol, a whole onion, and six cloves of garlic. All right, friend, let's get started and make this amazing red chili sauce.

1/2 tsp ground cumin (optional)

pepper to taste

1/3 cup oil (for softening corn tortillas)
12 oz Colby Jack or cheddar cheese
ENCHILADA RED SAUCE INGREDIENTS
3 to 4 Tbsp oil
1/4 cup all-purpose flour
2 to 3 Tbsp light chili powder
1 Tbsp beef or chicken bouillon
1/2 tsp onion powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
2 cups water
