How To make Elegant Crabmeat Balls
2 cn Crabmeat (6-7 oz cans)
1 c Bread crumbs (fresh)
3 T Sherry cooking wine
1 T Lemon juice
1 T Onion (grated)
1 t Dry Mustard
1/2 t Salt
1 x Pepper
1 pk Bacon (cut into halves)
1 x Parsley
Drain and flake crabmeat; combine remaining ingredients except bacon. Mix well. Shape into walnut sized balls. Wrap in bacon half; secure with toothpicks. Broil under medium heat until bacon is crisp, approximately 10 minutes, turning to brown evenly. Garnish with parsely ans lemon.
Makes appromately 2 dozen.

Fried Mac n Cheese Balls (The Cheesecake Factory style)
This 'Cheesecake Factory style' Fried Mac n Cheese Balls is another classic that you have to try. Super cheesy macaroni stuffed inside is held together by a crunchy outer layer. Dip it on Marinara sauce and have a bite...you will be lost in another yummy world.
Makes 16 medium sized balls
INGREDIENTS
FOR MAC N CHEESE
Elbow pasta - 225 gms
Butter - 1 Tbsp
All purpose flour - 1 Tbsp
Milk - 1 cup
Cheddar cheese - 225 gms, grated
Gouda cheese - 225 gms, grated
Garlic powder - 1/2 tsp
Salt and pepper to taste
FOR COATING
Egg - 1
Milk - 1 Tbsp
Seasoned bread crumbs - 1 - 1.5 cups
Oil for frying
Perfect Marinara Sauce recipe :
METHOD
- Cook pasta until al dente in a pot of boiling water seasoned with salt. Drain and rinse with cold water and keep aside.
- On med-low heat, melt butter and add flour and cook for a min.
- Pour in the milk followed by cheddar and gouda cheese.
- Add garlic powder and season with salt and pepper
- Once the cheese has melted add the mixture into the pasta and mix. Transfer it into a shallow glass pan
- Cover and refrigerate for a min of 2 hrs.
- Shape the cold mac and cheese into medium size balls and place them onto a wax paper-lined tray and freeze the balls overnight.
- For coating the balls, beat an egg with milk.
-Dip the frozen balls into the egg wash then into the bread crumbs. Put the balls back into the freezer until you are ready to fry.
- Fry the Mac and cheese balls until they are golden brown and center is hot, about 5 minutes.
- Serve hot with calm cuisine’s Marinara or Alfredo sauce and some grated parmesan (opt).

NOTES
- You can substitute the gouda cheese with mozzarella cheese.
- You can store these balls in the freezer for at least 2 months for a quick meal or snack making it perfect for Ramadan meal prep.
- Shape the Mac and cheese into small lime sized balls for the perfect party appetizer.

Betty's Appetizer Salmon Ball
Betty demonstrates how to make an Appetizer Salmon Ball. This is a simple and elegant appetizer made from canned salmon and cream cheese.
Appetizer Salmon Ball
1 can (about 16 ounces) pink salmon, drained, with skin and bones removed
8 ounces cream cheese, softened
1 small onion, minced
2 tablespoons lemon juice
½ cup minced parsley
¼ cup finely-chopped pecans
Use 2 forks to flake the salmon in a medium-sized bowl. Add cream cheese and mash with a fork until well blended. Add onion and lemon juice. Mix well. Shape into a ball, enclose in plastic wrap, and chill until firm. Sprinkle parsley and pecans on waxed paper. Mix well. Roll salmon ball in parsley/pecan mixture until well coated. Cover and refrigerate until serving time. Place salmon ball in center of platter and surround with assorted crackers. Serve and enjoy! --Betty
