How To make Elegant Tea Cookies
1/2 c Butter
1 c Granulated sugar
1 Egg
1 tb Heavy cream
1 ts Vanilla
2 c Flour
1/2 ts Baking powder
Recipe by: Sue Klapper In a bowl, cream butter with sugar until very light. Add well beaten egg, cream and vanilla. In a separate bowl, sift flour with baking powder; add creamed mixture and blendwell. Roll dough into a log and wrap in aluminum foil. Chill in refrigerator overnight, or in the freezer for at least 2 hours. Preheat oven to 350. Remove dough from refrigerator, slice very thin and place slices on greased cookie sheets. Preheat oven to 180 C Bake 20 minutes

These cookies are absolutely delicious! The lemon zest gives them a wonderful citrusy flavor that pairs perfectly with a cup of tea or coffee.

Fancy Tea Biscuits( European Style with Flour, Butter, Sugar & Chocolate)
Tea Biscuits
INGREDIENTS:
350 gr. (0.8 lbs. or approx. 2 cups +1 tbsp.see note 2) all purpose flour
50 gr. (1.8 oz. or approx. 5 tbsp.) powdered sugar
90 gr. (3.2 oz.) unsalted butter
135 gr. (4.6 oz. (US, liquid) or 1/2cup + 1 tbsp.) water
5 ml (1 tsp.) pure vanilla extract
1 ml (1/4 tsp.) salt
5 ml (1 tsp.) baking soda
TOPPING: approx. 50 chocolate pieces
Notes:
1. The recipe yields approx. 48 biscuits (if using a 55 mm or 2-1/4” cutter).
2. I have measured the weight of 2 cups and 1 tbsp. of flour on my scale. I’m using a cup that has a volume of 235 ml. and a measuring tablespoon (tbsp.) with a volume of 15 ml.
