Historical Baking: Episode 9 - Election Cake Revisited!

In honor of the successful inauguration of Joe Biden as president, and the senate elections in Georgia earlier this month, I thought I would try baking that election cake again! So, stay tuned to see if it worked.

Election Cake
Original recipe:
Two pounds Sugar,
Three quarters of a pound of butter,
One pint of milk made into a sponge,
four eggs,
Two tablespoonsful of cinnamon,
And flour enough to make a dough.
Set a sponge the evening before with a pint of milk, a gill of yeast, a little salt, and flour enough to make a thick batter. The next morning stir the butter and sugar together, whisk the eggs, and add to it with the sponge and other ingredients, and flour enough to form a dough. Knead it, butter your pan, put in the dough; let it rise. When it is light bake it.
My version, half recipe (in US measurements because I have a lot of work to do and don't have the energy to convert to metric, I'm sorry)
For the sponge:
1/2 cup natural yeast
1 cup milk
pinch of salt
1.5 cup flour
For the dough:
2 1/4 cups sugar
1 1/2 sticks butter (room temperature)
2 eggs
1tbsp cinnamon
2.5 cups flour
Pinch of salt
Mix the yeast, milk, salt, and 1.5 cup flour in a bowl and let sit for 6-8 hours to form a sponge.
When it has sponged, mix the butter and sugar in a large bowl. Whisk the eggs and add them, cinnamon, salt, and yeast sponge to the bowl. Add in the 2.5 cups flour and knead to form the dough. Butter your baking pan, put in the dough, cover it, and leave it to rise until it is light. Bake in a 325F oven for 75 minutes.

The winner of this election deserves the Election Cake that I prepared today. Happy Election Day America!!! Go VOTE! (FYI) Election Cake is a yeast cake mix with spices, raisins and nuts. My Election Cake, I used walnuts. The election cake is soft inside but has sweet crust it's very unique. My Election Cake is for American People who gave their time, patience waiting in line before they cast their vote. Even these challenging times of pandemic they still practiced their right to VOTE, either in person or in mail-in voting, whoever their bet. Let's celebrate election day with my election cake. Amazing Grace!!!

0:04 In a large bowl mix warm water (100-110°F). yeast and 1 tbsp. sugar. Let it stand for 5 mins.
0:59 In small bowl mix raisins, walnuts and 1 tbsp. flour. Then set aside.
1:33 The yeast mixture after 5 mins.
1:42 Mix yeast mixture and 1 cup flour until well blended
4:00 Add the rest of the ingredients and mix for 3 mins.
6:53 Then fold the raisins and walnuts to the batter.
7:32 Then grease the loaf pans and transfer the batter. Then bake at 350°F for 1 hr. to 1 1/2 hr.
9:18 Transfer to wire rack and let it cool at an hour.

18th Century Bribery Election Cake ~~ It’s a thing!! ????????????
Election Cake
Mix 1 c warm water
1 pkg yeast
1T sugar
1 T coconut oil or vegetable
2 1/2c flour
Mix. Cover. Rise overnight. Sleep.
Morning:
In separate bowl cream:
2 sticks soft butter
2 c dark brown sugar
4 eggs, well beaten
1 T lemon rind
Mix well
In superstar bowl:
1 1/2 c flour
1 1/2t baking soda
1/2 t cloves
1/2 t mace
1/2t nutmeg
(Or I simply used 1 1/2 t pumpkin pie spice)
1/2t salt
Whisk together and add to butter mixture.
Add:
1 c raisins
1 c dried cranberries
Soaked in 1 c buttermilk (original recipe used 1 c whiskey ????) you could use apple juice also.
Stir batter into yeast mixture and stir very well.
Prepare 3 loaf pans. Spray. I sprinkled with cinnamon and sugar????. Tastes so good. Fill.
Cover and rise one hour.
Bake 350 for almost an hour. Keep eye on it. Do not overbake.
