How To make Election Cake
1 c Currants, soaked overnight
-in a tightly closed jar in 1/2 c -Brandy
1 tb Sugar
3/4 c Scalded Milk
1 Yeast Cake
1/4 c Warm Water
1 c Flour, unsifted
1/2 c Butter
1 c Sugar
2 1/4 c Flour, sifted
1/2 ts Salt
3/4 t Mace
1 ts Cinnamon
1 Egg, whole
1 ts Lemon Rind, grated
2 ts Lemon Juice
LEMON OR ORANGE GLAZE:
RECIPE TO FOLLOW:
To the scalded milk add 1 Tbsp. sugar; cool. Dissolve the crumbled yeast in warm water, and add to milk. Add the unsifted flour, and beat until well blended. Let rise in warm place until it has doubled in bulk, about 1 hour. Cream butter and sugar until very light. Drain brandy from currants. Place sifted flour, salt, mace, and cinnamon in sifter. Add egg to creamed mixture and beat until light. Stir in lemon rind and juice. Add yeast mixture and beat thoroughly. Add currants, retaining the brandy for later. Sift in flour, add brandy, beat well. Place in tube pan or 9x5 loaf pan that has been well greased. Cover with a cloth and place in warm place away from draft. Allow to rise until doubled in bulk. This mixture rises very slowly and may take 4 to 6 hours to double in bulk. Bake at 375?F for about 45 minutes. Cool in pan briefly. Turn out on rack, allow to cool further. ELECTION CAKE (adapted for a quicker cake from an 1896 recipe from Fannie Farmer's The Boston Cooking-School Cook Book)
INGREDIENTS
1/2 Cup Butter
2 Eggs
1 Cup (200g) Brown Sugar
1/2 Cup (118ml) Buttermilk
2/3 Cup (106g) Raisins
8 Finely Chopped Dried Figs
1 2/3 Cups (210g) Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1 Teaspoon Cinnamon
1/4 Teaspoon Cloves
1/4 Teaspoon Mace
1/4 teaspoon Nutmeg
1 Teaspoon Salt
For Whiskey Sauce
2 Cups (240g) Powdered Sugar
1 Teaspoon Vanilla
3 Tablespoons Whiskey
Equipment
A mixing bowl and spoon
9 inch loaf pan (or round cake pan)
METHOD
1. Grease a 9'' loaf pan and set the oven to 350°F/176°C.
2. In a medium bowl, whisk together Flour, baking soda, baking powder, cinnamon, clove, mace and nutmeg. Set aside.
3. In a large bowl, cream together the butter and sugar. Add the Eggs and beat in. Mix the buttermilk, raisins and figs into the batter. Finally, fold in the flour mixture by hand until just incorporated. Pour batter into the prepared loaf pan and bake until an inserted toothpick comes out clean; about 50 minutes.
4. For the whiskey sauce, mix together the powdered sugar, whiskey, and vanilla until creamy. To change the consistency, add more sugar or whiskey.

The winner of this election deserves the Election Cake that I prepared today. Happy Election Day America!!! Go VOTE! (FYI) Election Cake is a yeast cake mix with spices, raisins and nuts. My Election Cake, I used walnuts. The election cake is soft inside but has sweet crust it's very unique. My Election Cake is for American People who gave their time, patience waiting in line before they cast their vote. Even these challenging times of pandemic they still practiced their right to VOTE, either in person or in mail-in voting, whoever their bet. Let's celebrate election day with my election cake. Amazing Grace!!!
