How To make Eight Pepper Chili
1 lb Stew beef 2 ea Chipotle peppers, chopped
1 cn Brooks Chili Hot Beans 2 ea Poblano peppers, chopped
16 oz Tomatoes, drained & chopped 1 ts Salt
16 oz Tomato sauce 1 tb Black pepper, ground
1 c Onion, chopped 1 ts Basil
1 ea Bell pepper, chopped 1 ts Oregano
6 ea Cloves garlic, crushed 1 ts Hot paprika
3 ea Jalapeno peppers, chopped 1 ts White pepper, ground
3 ea Hungarian peppers, chopped 2 tb Tabasco sauce
1 ea Habanero pepper, chopped 2 tb Worcestershire sauce
2 ea Ancho pepper, crushed 4 tb Mexene chili powder
3 ea Hot banana pepper, chopped 1 ts Cumin, ground
Cut the beef into medium sized chunks. Chop the onion and peppers. Crush the garlic. In a large pan (about 6 quarts, non-reactive) cook the beef, onions, peppers and garlic until the beef is browned. Add the worcestershire and tabasco. Cook until vegetables are tender. DO NOT DRAIN! Stir in tomatoes, tomato sauce and beans. Add the remaining spices. Use more or less chili powder to taste. Reduce heat to low and cook covered, 1 - 2 hours. Stir occasionally. Serve with tortilla chips, shredded cheddar cheese and sour cream. Recipe by: ??? Entered by Roy Olsen roy@indy.net -----

NO BEAN Super Bowl Chili Recipe
-2 lbs beef chuck roast
-2 lbs beef sirloin steak-1 onion diced-4-5 garlic cloves minced-1/2 cup Malcom’s Bonafide Chili Seasoning -28oz can diced tomatoes-28oz can tomato sauce-1 cans Rotel diced tomatoes and chilis-1 can diced green chilis-1 Tablespoon Worcestershire-1 Tablespoon beef broth concentrate-2 teaspoons sugar-Salt and Black Pepper to taste
1.Cube the chuck roast and sirloin. Season with Bonafide Chili Seasoning and toss.
2.Run the seasoned cubes of beef through a meat grinder using the course grinding plate.
3.Brown the ground meat in a large Dutch oven over medium heat.
4.Add the diced onion and cook 3-5 minutes then add the minced garlic and cook for an additional 1-2 minutes.
5.Season with 4 heaping Tablespoons of Bonafide Chili Seasoning, Worcestershire, beef broth concentrate, salt and pepper (to taste).
6.Add the diced green chilies, diced tomatoes, tomato sauce, and Rotel tomatoes and chilies.
7.Add a pinch of sugar and bring the chili to a simmer. Cook it uncovered for at least an hour - stirring often.
8.Serve the chili with shredded cheddar cheese and finely diced white onion.

Cut up some onions and peppers. Cook them in a big pot until soft. Dump in canned crushed or puréed tomatoes and undrained canned beans — roughly equal quantities is a good starting point, though I like extra tomato. Dump in a lot of spices until you like how it tastes — cumin + smoked paprika + oregano + garlic powder is a good basic blend. Simmer for about a half hour. If you want to be fancy, melt in a little dark chocolate. Eat and go do something else with your life.

From time to time I like to experiment with different flavors to see what I can come up with. This is one of my many ways to make chili. It's so GOOD! Feel free to take out any ingredient that you don't like, this recipe is very forgiving.This chili taste BEST when served immediately after cooking.

Chili Recipe
Here's what I used in the video:
Power Quick Pot ( I'm using a 10 Qt)
1 Green bell pepper
3 Celery stalks
1 Yellow onion
5 Garlic cloves
2 lbs. of Ground beef (I used 80/20 lean)
2 Tsp Oregano
2 Tsp Brown sugar
2 Tsp Coriander
4 Tbsp Chili powder
3 Tbsp Ground Cumin
2 Tsp Dried Thyme
1 Tsp Smoked paprika
1/2 Tsp Dried Basil leaves
1/2 Tsp Black pepper
1/4 tsp Cayenne Pepper (to taste, gradually add more as needed)
Salt to taste ( I used 1 1/2 tsp)
1 Bay Leaf
4 Tbsp Green onions
2 16 oz Cans Kidney beans (rinsed and drained)
1/2 cup canned Black beans
1- 28 oz Can Hunts Diced tomatoes (with juices)
1- 29 oz Can Hunts Tomato sauce
1- 14.5 oz Can Swanson Chicken broth (low sodium)
2 Tsp Worcestershire sauce
