Baked Eggplant with chicken vegetable stuffing
Baked Eggplant filled with a chicken stuffing. These eggplants also known as aubergines, are cut in half and then filled with a chicken mince and vegetable stuffing. Topped with Parmesan cheese and baked in the oven. They make a great meal at anytime of day with their cheesy crusty tops.

Ingredients:
Small eggplants 6
Minced meat 500 g
Pecorino cheese 4 tbsp
Eggs 1
Garlic 1 clove
Parsley 1 bunch
Stale bread 100 g
Cheese whey 1 glass
Salt and Pepper 1 pinch
Sauce:
Extra virgin olive oil 2 tbsp
Red Onion 1 small
Tomato pulp 500 g
Basil 7 leaves
Salt 1 pinch
Cooking:
180°C or 355°F for 30 + 10 minutes then 180°C or 355°F for 25 minutes + 230°C or 445°F for 10 minutes

Stuffed baked eggplants is a very tasty and hearty dish! For this snack you can use practically all kinds of stuffing, but the taste is especially tender when you stuff the eggplants with mushrooms, cheese, tomatoes, and garlic and spices give an amazing taste and aroma! This light, delicious eggplant appetizer looks impressive and it is very easy to make! Great option for a vegetarian table!)

• 2 eggplants
• 1 onion
• 150 g of white soft cheese
• 100 g of yellow cheese
• 2 mushrooms (champignon)
• 1 tomato

Stuffed with Chicken & Eggplants stuffed with ground chicken and veggies will come to taste of a distinguished foodie even. This dish will take its honored place on a festive table and enrich a family or friends’ dinner.

✅ Ingredients:
• ground chicken – 7 oz | 200 g
• 2 large eggplants
• 12 cherry tomatoes
• cheese – 1 oz | 30 g
• onion – 3 oz | 100 g
• garlic – 3 cloves
• paprika – 1 tsp
• red chili pepper – ½ tsp
• ground black pepper – ½ tsp
• salt – 1 tsp
• fresh parsley – ⅓ oz | 10 g
• dried basil – 1 tsp | 5 g
• olive oil – 2 tbsp
✔︎ You will need:
• oven
• baking dish
• pan
• carving board
• bowl
???? Preparation:
1. Chop up the onion and parsley, mince the garlic.
2. Cut the eggplants lengthwise into two equal parts and make boats with a knife – cutting out about 07-08 in | 2 cm of the flesh of the eggplants, chop the flesh.
3. Fry the onion in the pan with the olive oil over medium heat for 2 minutes.
4. Add the chopped eggplant flesh and fry for another 2 minutes over medium heat.
5. Add the ground chicken and fry stirring constantly for another minute over medium heat.
6. Add the garlic, paprika, red pepper, black pepper, salt, dried basil, parsley and halved cherry tomatoes and stir well.
7. Lay out the prepared eggplant boats on a baking dish and stuff with the prepared filling.
8. Place the dish into the oven and roast for 20 minutes at 350°F | 180°C.
9. Take out and sprinkle with the grated cheese atop and place back for another 5 minutes.
10. Decorate the stuffed eggplants with basil leaves and serve to the table.
Italian Grandma Makes Stuffed Eggplant
Stuffed Eggplant:
3 large Eggplant
1 large Onion – coarsely chopped
3 cloves Garlic – sliced
2 + 3 stalks Celery – chopped
1/4 cup Fresh Basil – chopped
1/4 + 1/8 cup Parsley – chopped
10 + 22 oz Peeled Plum Tomatoes - crushed
1 cup Bread Crumbs - approx
1 cup grated Pecorino Romano Cheese - approx
1 tsp Powdered Garlic
1 Tbsp Oregano
4 medium Potatoes – sliced ½ inch thick
3 medium Carrots – large chunks
Olive Oil
Water
5-6 Fresh Basil Leaves – torn & sprinkled on top
Salt & Pepper to Taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.

Ingredients For Stuffed Eggplant / Karniyarık:
For the stuffing:
400gr. ground meat (beef or half mutton)
2 medium onions
3 tomatoes
3 sweet green peppers
handful of parsley
1 tbsp each tomato and red pepper paste
olive oil
salt, ground black pepper, and red pepper flakes to taste
For the eggplants
10-11 medium same size, thin eggplants (about 1 kg or more)
salt to rub
paper towels
vegetable oil to fry
For the sauce:
1 tbsp tomato paste
3-4 tbsp olive oil
about 2 cups boiling water
(I used 40 cm round baking tray to cook, it is OK to use a regular tray or even you can cook it in a shallow wide pan on the stovetop)
