How To make Eggplant Pilaf In Olive Oil
1 md Eggplant
Salt 2 c Long grain rice
Water 3/4 c Olive oil
3 ea Chopped onions
2 tb Pine nuts
1 lg Ripe tomato, diced
2 tb Currants
1 tb Sugar
2 ts Cinnamon
2 ts Allspice
Salt & pepper 1 c Fresh dill, chopped
Cut stem off eggplant. Using vegetable peeler, peeling lengthwise, remove a strip of skin, leave next strip on. Continue to peel in this striped fashion. Cube eggplant into 1" cubes. Sprinkle generously with salt & set aside for 3 hours. Rinse well. Drain as well as possible, but don't tear the eggplant. Soak rice in hot water mixed with 2 ts salt, until the water turns cool. Drain well & set aside. Heat olive oil in a heavy pan & cook eggplant cubes, stirring frequently. till tender & golden brown on all sides. Drain to remove excess oil. Add onions & pine nuts to same pan. Saute for 15 to 20 minutes. Stir in the rice & cook, stirring frequently, for 8 to 10 minutes. Stir in eggplant & rest of ingredients except dill. Add 3 cups hot water, bring to a boil, cover & cook over medium heat for 5 minutes. Reduce heat to low & cook till all the water has been absorbed. Stir in the dill. Ensure that the skillet lid has a very good seal. Cover the skillet with a clean towel & put the lid on top of that. Ingredients For Turkish Rice Pilaf With Orzo:
2 cups Baldo, Osmancık, Calrose, or similar long-grain rice that doesn't contain too much starch
1 tsp salt, 2 cups hot water to soak
4 tbsp orzo pasta
1 heaped tbsp butter
4 tbsp olive oil
salt to taste
3+1/4 cups hot water (or you can use some chicken stock)

Turkish Rice Pilaf Recipe (Hints To Make A Fluffy And Full Of Flavored Pilaf)
Turkish rice pilaf (pilav) is most traditional and well known side dish in Turkish Cuisine. There many rich varieties including orzo pilaf but this plain pilaf made with butter and olive oil has its own flavor and accompany with many dishes like doner kebab, chickpeas or white beans with meat dishes.
Ingredients for Rice Pilaf : (6 serving size)
2 cups long grain rice (In Turkey we usually use baldo or osmancık rice, calrose may also be used)
1 tsp salt to soak in the water
about 3 cups hot but not boiling water (for soaking)
For the cooking:
2 tbsp butter
3 tbsp olive oil
3 cups boiling water
1 to 1+1/2 tsp salt (depend on your taste and health:)
dash of sugar
5-6 drops of lemon juice
Note:To cook the pilaf try to use wider and shallow pan if possible

Turkish Eggplant Shakshuka - Vegan Meze with Fried Eggplants & Chilies
The word shakshuka usually refers to a Middle Eastern / North African egg dish, but in Turkey, shakshuka or as we call it şakşuka is a vegan meze dish cooked in olive oil and usually served with drinks and made with eggplants.
This is one of the easiest and but surprisingly delicious meze dishes and the ingredients may vary from region to region, but eggplant is usually the main vegetable. In some regions it is made with green tomatoes and some versions includes potatos or zucchinis.
Possibly one of the most popular mezes in Turkey, şakşuka being a appetizer, it can also be enjoyed as an incredibly delicious vegan meal on its own.

Ingredients:
• 3 eggplants, peeled in strips and diced
• 5 green chilies, roughly chopped
• 4 cups frying oil
• 3 medium size tomatoes, finely grated (400 ml (1+ ¾ cups) of tomato puree would do great)
• 3 tablespoons olive oil
• 5 garlic cloves, chopped
• 2 tsp salt
• 1 tsp black pepper
• 1 tbsp white wine vinegar
• 1 tsp sugar

dried peppers 25 pieces
2 medium onions
500gr. minced meat (better if you use a mix of lamb and beef)
1/2 to 1 bunch chopped parsley
1+1/4 to 1+1/2 cup rice (Osmancık, Baldo or other types for making rice pilaf or long-grain types that don't have starch)
1+1/2 tbsp tomato paste
less than 1 tbsp pepper paste
1 tsp each salt, black pepper, hot red pepper flakes (add the amount hot pepper as you like for your taste)
1+1/2 tsp allspice, sumac
1/2 tsp isot pepper (optional)
4-5 tbsp olive oil
more olive oil for top
