Eggnog Chaffles?!?! - Will It Chaffle? || The Keto Kitchen

Will it chaffle is a challenge set by the lovely Ginger that I was more than willing to partake in.

The challenge is simple - what can you make in the form of a chaffle?
I went with the cookey, zany idea of an eggnog chaffle!

THIS IS THE WAFFLE MAKER I USED -
Please note, there are a few minor changes to the recipe compared to the video - this is just because there were a few things I wanted to adapt that were so minor I didn't feel a need to re-record the attempt.
|| EGGNOG CHAFFLE RECIPE ||
CHAFFLE INGREDIENTS:
- 1 Egg, separated
- 1 Egg Yolk
- 1/2 cup (57g) Mozzarella, shredded
- 1/2 tsp Rum, Rum Extract OR YOU CAN OMIT THIS (I used Kraken Black Spiced Rum)
- A splash of Vanilla Extract
- 1 tbsp Sweetener (I used Erythritol)
- 1/4 tsp Nutmeg, dried
- A dash of Cinnamon, dried
- 1 tsp Coconut Flour
ICING INGREDIENTS:
- 2 tbsp Cream Cheese or Double/Heavy Cream (it will be much more liquid-y with cream)
- 1 tbsp Sweetener, preferably powdered (I used Powdered Erythritol)
- A splash of Rum or Rum Extract
METHOD:
1. Preheat your waffle maker (preferably a mini waffle maker) according to the manufacturer's guidelines.
2. In a small bowl mix BOTH egg yolks until smooth. Add sweetener and mix again until the sweetener has almost entirely dissolved and the yolk is smooth. Add in the nutmeg, cinnamon and coconut flour. Mix well and set aside.
3. In a separate large bowl, add the egg white, rum and vanilla. Whisk until they are well combined (the whites should not be anywhere near peaking, they should just be darker in colour from the other ingredients).
4. Add the yolk mixture into the egg white mixture and mix well - you should have a thin batter. Fold in the mozzarella cheese so it's all coated and well combined.
5. Once the waffle maker has heated up, add a small coating of butter or oil (I used Coconut Oil Spray).
6. Add the half of the batter if your waffle maker only makes one waffle. Making sure to spread it evenly.
Cook for about 6 minutes or until solid - check your waffles every minute after 5 minutes.
7. If you have a single serving waffle maker, repeat steps 3-4.
8. Once your chaffles are cooked, in a small bowl, combine ALL icing ingredients well. Pour over your chaffles or use as a dip for them, enjoy!

Gluten-Free Eggnog Waffles
These eggnog waffles are great for adding fillings or stuffing (sandwich) because of their chewy, stretchy, and flexible texture. I'm making a gluten-free version here. If making the regular version, just substitute gluten-free flour with regular flour and omit the xanthan gum.
Ingredients:
3 large eggs
2 cups eggnog
1/4 cup sugar
2 tbsp vegetable oil or melted butter
1 ts vanilla extract
3 cups gluten-free all-purpose flour, more or less as needed
(Add 1/4 xanthan gum if your gluten-free flour doesn't contain it. But it is not necessary to add it.)
1/4 ts salt
1 ts baking powder
1/2 ts. baking soda
1/4 ts Ground nutmeg
Method:
1. In a large bowl, beat eggs and sugar until combined. Then add eggnog, oil, and vanilla, and mix well.
2. Combine all of the dry ingredients together. Then add it to the wet mixture and mix well.
3. Preheat the waffle iron for 2 minutes. Spoon the batter and pour it into the waffle iron just to cover the surface.
4. Cook for 3-5 minutes or follow your waffle iron manufacturer's instructions.
5. Grease the waffle iron with melted butter or oil from time to time to prevent sticking.
6. Add some filling you desire to the waffle after pouring the batter into the iron such as raisins, sweet corn, shredded coconut, chocolate chips, berries, or sliced banana, etc. Then pour a little bit of batter over the filling and cook for 3-5 minutes.
Note: You can add fillings or stuff as much as wanted. If adding a lot of fillings or stuffing, then the waffle will become a sandwich when folded in half. You can make a savory waffle sandwich too. Just omit the sugar and vanilla in this recipe and fill it with cooked meat, hot dog, or cooked seafood.
