1 lg Egg plant 2 ts Butter 1 Egg, beaten 1 ts Salt 1/4 ts Pepper Flour Boil egg plant, scoop out the meat and mix with butter, egg, salt, pepper and enough flour to drop from a spoon. Heat shortening (375 degrees). Drop batter from spoon and fry. Drain on paper towel. Cooking time about 6 minutes.

Hello friends, Welcome back to my channel. Today's recipe is Crispy eggplant fingers / fried eggplant sticks/ brinjal fry...... an easy snack recipe for kids by tiffin box. This recipe of crispy eggplant fingers is perfect as an appetizer, snack, or your kid's tiffin ...plz try it once at home, they'll just love it.
INGREDIENTS:
1 or 2 fresh eggplant/brinjal 1 egg lightly beaten with salt 1/2 cup breadcrumbs
1/2 cup all purpose flour 1/4 tsp red chili powder 1 tblsp meat masala or any type of ready mix masala ½ tsp salt
*Recipe* Slice the eggplants in about 0.4 inch (1 cm) thick slices. Dry them over a paper towel and add a pinch of salt on top. Break the eggs in a large bowl, and add the flour, olive oil, water, and paprika powder. Mix everything into a smooth mixture. Use this mixture to coat the eggplants. Heat a skillet, and add vegetable oil. Deep fry the eggplants for about 2 minutes, until golden and crispy. Serve them with your favorite dip!
