1 lg Egg plant 2 ts Butter 1 Egg, beaten 1 ts Salt 1/4 ts Pepper Flour Boil egg plant, scoop out the meat and mix with butter, egg, salt, pepper and enough flour to drop from a spoon. Heat shortening (375 degrees). Drop batter from spoon and fry. Drain on paper towel. Cooking time about 6 minutes.
Ingredients: Besan/Gram flour = 1cup Rice flour = 2 Tbsp Chilli powder = 2tsp Turmeric powder = 1/2 tsp Ajwain/Oma = 1tsp Hing/Asefoetida = pinch Baking soda = pinch Water as needed Oil for deep frying

GUYANESE BAIGANEE/ EGGPLANT FRITTERS| recipe
1/2 cup split peas remember when split peas is soaked it doubles in size so 1/2 cup will be = 1 cup and when blended with about 1/3 cup water it will become 2 cups. 1 1/2 cups all purpose flour 1 tbsp green seasoning 1 tsp seasoned salt 1 tsp complete seasoning 1 tsp chicken bouillon 1/2 tsp black pepper 1 tsp geera/ground cumin 1 tsp turmeric 3 cloves garlic 2 stalks green onions hot pepper as much or as little as you like 2 medium size eggplant/baigan

Crispy fried eggplant in the shape of calamari ????
Batter: 2 large eggs, 1/2 tsp salt, pepper x3, beat eggs, then add 100g cornstarch, mix well. Brush the batter on eggplants. Coat with breadcrumbs.
Spray some oil of your choice on both sides. Air fry at 375F for 10 minutes. Or bake at 390F for 15 minutes. Observe as you bake them, avoid overcooking.
I also tried to deep fry one. But it actually tasted no difference from the air fried one. So I’d recommend baking/air frying instead, healthier.
For the sauce, I used okonomiyaki sauce cuz I had that in the fridge. It paired very well with fried eggplants. ????
