Dutch Oven Meatloaf
In the video I say 1 1/2 lbs. beef, the recipe calls for 2 1/2 lbs of ground beef, I used 2 lbs. Sorry, still getting the hang of this video making. I changed original recipe to my liking. Hope you like it. Enjoy !!! Recipe below.
Meatloaf :
2 ½ lbs ground chuck or ground beef ½ Onion, coarsely chopped
1 Tbls. Worcestershire sauce ½ red bell pepper, coarsely chopped
1 egg, beaten 4 white mushrooms, coarsely chopped
1 tsp. Dried Italian herbs 3 cloves garlic, coarsely chopped
1 Cup plain bread crumbs Very 2 tsp. salt / 1 tsp. pepper
½ tsp. cayenne pepper 1 tsp. olive oil
Glaze ingredients:
2Tbl. Brown sugar 2Tbl. Ketchup
2Tbl. Dijon mustard hot pepper sauce to taste
1 – In a large mixing bowl, place the onion, bell pepper, mushrooms, and garlic. Mix in the beef, Worcestershire sauce, and egg. Then add and mix in the Italian herbs, salt, black pepper, and cayenne pepper. Pour in bread crumbs. With hands mix in the crumbs.
2 – Put the olive oil in the Dutch Oven. Form the mixture into 2 loafs next to each other In the Oven. ( I like to slightly pre-heat the oven before this)
3 – Bake at 325 degrees F (15 briquettes on top, 7 briquettes under oven) until meatloaf is hot, about 15 minutes.
4 – Meanwhile in a small bowl, mix the brown sugar, ketchup, Dijon mustard, and hot sauce together. (until brown sugar is dissolved)
5 – Take lid off of Dutch Oven. Gently pour and smooth the glaze on top of each loaf, pull a little bit down the sides if you can.
6 – Put lid back on Oven, and bake the loaf about 30 to 40 minutes more until glaze has baked in and loaf is no longer pink inside. (Thickest part of loaf should be 160 degrees F) Cooking time will depend on shape and thickness of meatloafs.

MOST FREQUENTLY ASKED QUESTIONS:
Q: How do you have internet at your cabins? A: I have cell service at both cabins but it is spotty due to foliage and cloud cover. I can access the internet from my cabins but have to drive to a local wifi location to upload videos.
Q: How old is Frankie? A: Frankie will be 10 in April of 2018
Q: What video editing software do I use? A: Presently, all I use is Windows Live Movie maker but I’m considering trying imovie, Adobe Elements or SONY VEGAS PRO.
Q: How do you get your water? Did you dig a well? A: Presently, I haul water to the NY cabin but at the NH cabin, I drop a kettle into an old well that was dug by hand by the settlers in the 1700’s.
Q:What is your favorite brand of cast iron cookware? A: I prefer using vintage cast iron. My favorites are BSR and Griswold. If I had to buy new I would buy a Lodge Brand. I plan to purchase this dutch oven in the future:
Q: What do you use for refrigeration? A: We have a small gas refrigerator that we salvaged from an old Shasta camper and a custom icebox that I built into the cabin wall. We make ice on site with a propane freezer.

Q: What do you use for cooking and heating? A: We use a Kitchen Queen 380 for cooking and heating during the winter months but we also have an antique gas stove in the cabin for when we don't need the heat from the KQ.

Push A Glass Into The Meat & Fill It With These 4 Ingredients
Meatloaf Stuffed With Ham, Cheese & Eggs ⬇️ FULL RECIPE BELOW ⬇️ Is there any dish more nostalgic than meatloaf? Probably not. Unfortunately, though, most of us have relegated meatloaf to mere childhood memories and don't ever really allow ourselves the simple pleasure of loafing it up. But we would do anything for meatloaf! Not the singer, obviously, but the dish, and so we worked hard to develop a recipe that takes the classic meatloaf and firmly establishes it in the 21st century. Filled with ham, cheese, garlic & herb cream cheese, and eggs, this ain't your mama's meatloaf, folks!

You'll Need:
For the meatloaf:
- 1½ lbs ground beef
- ½ cup bread crumbs
- 2 eggs
- 1 onion, diced
- 2 garlic cloves, minced
- salt & pepper to taste
For the filling:
- 2-3 ham slices
- ¾ cup garlic & herb cream cheese
- 3-4 Gouda or Swiss cheese slices
- 3 eggs
Here's How:
1. Preheat the oven to 350°F. Grease a 9 x 5-inch loaf pan with butter and swirl some bread crumbs around the inside of the pan so they stick to the butter. Combine the ground beef, bread crumbs, eggs, onion, salt, and pepper, and transfer the meatloaf mixture to the greased loaf pan. Press a tall glass into the loaf pan horizontally to create an indent in the center.
2. Line the indent with the ham slices.
3. Cover the ham with the garlic & herb cream cheese.
4. Cover the cream cheese with the cheese slices.
5. Crack 3 eggs over the cheese.
6. Transfer the loaf pan to the oven and cook for 60 minutes.
This stuffed meatloaf is sure to be the ultimate crowdpleaser! Filled with ham, cheese, and eggs, there's nothing sentimental or nostalgic about this recipe – it's the official meatloaf of the 21st century, so get with the times!
