How To make Dutch Cookies
2 c All-purpose flour
1/8 ts Salt
1 c Butter or margarine
1 c Brown sugar
1 ts Vanilla
1 Egg yolk
1 Egg white; slightly beaten
1/4 c Sugar
1/2 ts Cinnamon; ground
3/4 c Almonds; sliced
Stir together flour and salt. In a large mixer bowl, beat butter or margarine with electric mixer on medium speed for 30 seconds. Add brown sugar and vanilla; beat until fluffy. Add egg yolk; beat until well combined. Stir dry ingredients into sugar mixture, mixing well Pat batter evenly in a ungreased 15 x 10 x 1" baking pan. Brush top with beaten egg white. Combine sugar and cinnamon; sprinkle evenly over top. Sprinkle almonds over all. Bake in 350 degree oven for 15 to 18 minutes or until light brown. Cut into 1 1/2" diamonds while warm. Cool in pan. Remove from pan with spatula.

2 cup plain flour
230g salted butter (use wijsman butter for best results)
½ cup caster sugar
1 egg
½ tsp vanilla extract
¼ tsp salt
Additional ingredients for topping:
½ tsp granulated sugar (for rectangular sugar slice)
1½ tbs raisins, chopped (for round raisin crunch)
Mix butter and caster sugar together until combined.
Add egg, vanilla extract, and salt and combine.
Sift in flour and mix until it has a cookie dough consistency and there is no longer any dry flour visible.
Tip: try not to overmix the dough here to prevent cookie from being too dense to eat.
There is enough dough to make 4 batches of cookie.
Round country style shape:
Take ¼ portion of the dough and place on baking paper.
Shape into a rough log shape.
Fold the baking paper over and use a dough cutter to help turn it into a round shaped log.
Refrigerate for 1-2 hrs right until before baking.
Slice into ¾ cm thick slices.
Rectangular sugar slice shape:
Take ¼ portion of the dough and place on baking paper.
Shape into a rough log shape.
Fold the baking paper over and use it to help form a rectangular shape.
Refrigerate for 1-2 hrs right until before baking.
Slice into ¾ cm thick slices and top with granulated sugar.
Vanilla ring shape:
Take ¼ portion of the dough and place into piping bag leaving some room at the tip.
Cut the tip off and place into another piping bag with a closed star piping tip fitted.
Pipe into desired shape until all the dough is used.
Refrigerate for 1-2 hrs right until before baking.
Round raisin crunch shape:
Take ¼ portion of the dough and mix with chopped raisins.
Place on baking paper and shape into a rough log shape.
Fold the baking paper over and use a dough cutter to help turn it into a round shaped log.
Refrigerate for 1-2 hrs right until before baking.
Slice into ¾ cm thick slices.
Bake cookies for 15 mins at 160℃.
Allow to cool on a wire rack and serve.

Ingredients you will need:
Cookie Dough
• 500g / 2cup Flour
• 3g / 1tsp Cinnamon
• 70ml Milk
• 1 Egg
• 250g / 1cup + 2tbsp Melted Butter
• 120g / 1/2cup + 2tbsp Sugar
• 16g / 2 packets of Dried Active Yeast
CARAMEL SYRUP
• 250g / 1cup + 3tbsp Brown Sugar
• 60g / 1/4cup Butter
• 375g / 1cup + 1 1/2tbsp Corn Syrup
• 4g / 1 tsp Cinnamon
The Instructions
Step 1 - Cookie Dough
1. Mix Milk and yeast together
2. Add melted butter, egg and sugar
3. Add the flour
4. Mix until it forms a dough
5. Work it on the counter until it becomes more soft on top
6. Put in a bowl and cover it
7. Wait for 1h before using it
Step 2 - Caramel syrup
1. Bring the corn syrup to a simmer
2. Add the brown sugar and let it melt
3. Add the butter and mix until it is completely incorporated
4. Add the cinnamon and set aside
Step 3 - Baking
1. Divide the dough into 40g balls
2. Heat a waffle cone maker to medium-high heat
3. Put a ball of dough in the machine and press until it is pretty thin
4. Let it cook for about 1 minute 30 seconds or until golden brown
5. Take it out and let it cool for a minute
Step 4 - Garnishing the cookie
1. Use a cookie cutter to have a perfectly round cookie
2. Cut it in the middle so you get 2 thin cookies
3. Put a big spoon of caramel syrup on one half and close the cookie
4. Press so the caramel goes equally everywhere
Step 5 - Eating the cookie
1. Pour yourself a hot cup of coffee or tea
2. Place the cookie on top of your cup for a minute
3. Eat the chewy and sticky caramel cookie :D
