How To make Dried Fig Jam
28 oz Dried figs (used both
-homemade and commercial) 5 c ;Water
1/2 c Fresh lemon juice
3 c Sugar
Seeds from juiced lemons 1 ts Ground cardamom
1 tb Dark rum
Place figs in 4 qt pot. Add all water, cover pot, bring to a boil and remove pot from heat. Let the pot of figs sit for at least an hour to plump them. Remove figs from the dark water with a slotted spoon. Reserve the water. Cut stems off figs with scissors and chop figs medium coarse by hand or in a processor. Add lemon juice and sugar to the fig water. Set water to a second boil, then reduce heat and let simmer for 5-10 minutes. Tie up seeds into a cheesecloth bundle and drop in fig water. Drop the chopped figs into the fig water. Bring fig jam to another boil, then let simmer for 15-20 minutes. Jam should be slightly thickened. Remove from heat. Take out the cheesecloth bag. Stir in the rum and cardamom well. Ladle into 1 pint jars (1/2 pint works, too), leaving 1/4" headspace. Seal jars according to manufacturer's instructions. Process jars for 15 minutes in a boiling water bath. Yield: About 4 pints.

DRIED FIG JAM
This is an addition to your holiday spread. Spread over your favorite cheeses , breads and crackers.
Ingredients
2 pounds of dried fig
2 cups of sugar and 1 cup of water
Juice of 1/2 lemon
1 ts ground anise
1 ts vanilla extract- optional
Directions:
Soak the figs in cold water for about an hour or less until they soften.
Drain, remove the stems and chop into quarters or smaller. Set aside,
In a medium size pot, add sugar and water. Bring to boil and add the lemon juice.
Add the figs and cook for about 10 minutes stirring occasionally.
Add the anise and vanilla and keep mixing for another ten minutes or until the mix thickens.
Let it set to cool for about 30 minutes
Place into the food processor and blend to pure'e
empty into a glass jar and keep in the fridge.
It should last for about 2 months.

Here is how to make easy homemade fig jam with dry figs / Fig jam with honey / no sugar fig jam / no pectin fig jam.
Dried figs are naturally sweet so there no need for added sugar. Also figs have a bit of its owned pectin but not too much; however, for a more jelly-like texture...add pectin, Arabic gum, or a substitute for Orange Jello
Recipe: No sugar no pectin fig jam.
2 lbs (1kg) dry figs
5 cups water
1cinnamon stick or orange peel
♥️Combined all ingredients and bring it to rapid boil then lower heat and simmer until figs are soft and plump.
♥️Cool completely, drained figs and reserved liquid...removed stems from figs, cut into pieces and pulse in a blender or food processor.
♥️In a pot over med- low heat, add reserved fig liquid + orange peel bring to a boil then lower heat and add figs... cooked and stir often until all liquid is absorbed. Now add 2 tsp vanilla mixed well.
♥️Enjoy! Stored in sterilized container for later use.
For a sweeter jam add raw honey and for a more jelly-like texture add pectin or jello
Add organic olive oil on top of fig jam as a preservative and it taste really good too.
