SHORT BIO OF DOROTHY MERCEDITA J. FERRERIA
1981
graduate of A.B. Communication Arts at the Ateneo de Manila University. Started as a psychology major but shifted to Communication Arts.
Worked as an advertising and public relations assistant for Rizal Commercial Baking Corporation until 1983.
1984
took chocolate artistry course under Chef Elaine Gonzalez at the Wilton School of Cake Decorating and Confectionery Art in Woodridge, Illinois, U.S.A.
1984
supplied a major bakeshop with chocolate lollipops and started a home based bakeshop specializing in cakes and chocolate desserts
1986
opened a candy cart at the Mile Long Specialty Theme Center along Amorsolo Street, Makati.
1988 to 1990
taught baking and cake decorating at the Maya Kitchens on a part time basis
won 3rd place in an on the spot cake decorating contest at the Food and Beverage Fair Manila held at the Folk Arts Center
1990
opened the doors of Dorothy’s Cooking School to the public in our home along Third Street, New Manila, Quezon City
the School officially operated in this location until 2007
2007 to present
we do small classes depending on requests of students. They form a group and we conduct the classes in my studio along Panay Avenue. We were also tapped by corporate clients to do special projects. We did a roadshow for the Cake Boss brand in different mall locations within Metro Manila. We service prime clients of food companies such as Fonterra and Nestle, giving clients recipes that are suitable for their set up and endorsing their prodoucts as well.
we also accept food orders, we are known for reinventing the chicken galantine into a loaf which we serve with our signature raspberry sauce
since the pandemic, we came up with cooking videos which we sell to our students here and abroad.
HIGHLIGHTS
TRAVELLING COOKING SCHOOL
We came up with a project called DOROTHY’S TRAVELING COOKING SCHOOL, which was launched in 2001 and went on until 2007. Instead of limiting classes within our location, we decided to tap local business partners and brought the Dorothy’s Cooking School experience at the doorstep of cooking and baking enthusiasts nationwide. This was supported by major food companies such as San Miguel, Nestle, Peotraco, Actron, etc. We were able to do this in the following provinces – Aklan, Bacolod, Iloilo, Cebu, Subic, Cagayan de Oro, Zamboanga, Gen, Santos City, Davao and other major cities.
WRITING CAREER
The death of the great Doreen Fernandez opened new doors for us. We were invited to be a columnist of Food Magazine, the leading food magazine at that time and as a weekly contributor for the Phil. Daily Inquirer offering a weekly menu guide accompanied by a couple of recipes. The stint with Food Mag ended in 2008 when the editor in chief retired. We were invited by Appetite Magazine to join them as a columnist and this went on until 2013. The Inquirer stint lasted for a whole year.
COOKBOOK AUTHOR
We wrote the following cookbooks –
Dorothy’s Cooking School Cookbook volume 1, a compilation of our best baking recipes taught in our school from 1990 to 1994
Dorothy;s Cooking School Cookbook Volume 2, a compilation of our best cooking recipes from 1990 to 1994
From Dorothy’s Kitchen, Volume 1 and 2 combined in 1 book with 12 new recipes as a bonus in the last chapter
The Many Ways to Roast a Chicken and The Many Ways with Chocolate, 2 e-books which we authored for the Apple Store. Ms. Norma Chikiamco and I were the first Filipinas to do this project way back in 2009
TELEVISION STINT
We were asked by F.D.Ventures to join the popular cooking show on TV 5, hosted by Cb Garrucho entitled Lasang Pinoy Atbp. We were doing weekly recipes for Nestle (Catnation Evap and Condensed portion), San Miguel Food Group for Anchor Butter, Magnolia Quickmelt Cheese, Magnolia Cream Cheese and Buttercup. We also created recipes for Payless Instant Noodles and Hunt’s Tomato Sauce.
FORMAL CULINARY LESSONS
First cooking class at the age of 10 with Ms. Margie Jacinto who also lived in New Manila.
