2 c Turkey pieces
3 tb Soy sauce
1/2 ts White pepper, ground
3/4 c Onion, chopped
1 ea Garlic clove, minced
1 1/2 c Stewed tomatos, sliced
1/4 c Celery, sliced
1/4 c Raisins
1/2 c Pineapple chunks
1 c Vermicelli, cooked
3 tb Corn oil or peanut oil
Heat oil in a large, heavy skillet. Add onions & celery and saute'intil onions start to turn trans- luscent. Add turkey, raisins, tomatos, soy sauce & vermicelli. Stir well and cover. Cook for 5 minutes then add the raisins. Cook covered for 5 more minutes and serve.

Juicy Mayo Roasted Turkey

Ingredients
1 1/2 cup mayonnaise
1 tablespoon paprika
4 teaspoons dried parsley
2 teaspoons garlic powder
2 teaspoon dried thyme
2 teaspoon ground sage
1 teaspoon hot sauce or a pinch of cayenne
Kosher salt and freshly ground black pepper
One 10- to 12-pound turkey
1 medium onion, quartered
1 head garlic, halved across the garlic cloves
Several sprigs fresh herbs, such as thyme, parsley, rosemary and sage
2 bay leaves
Directions
Special equipment: a roasting rack, a large roasting pan
Adjust a rack in the lowest position and preheat oven to 325 degrees F. Set a roasting rack in a large roasting pan.
Stir together the mayonnaise, paprika, dried parsley, garlic powder, dried thyme, ground sage, hot sauce, 2 tablespoons salt and 2 teaspoons black pepper in a medium bowl. Set aside.
Remove any turkey parts from the neck and breast cavities and reserve for other uses if desired. Dry the bird well with paper towels, inside and out. Rub the mayonnaise mixture all over the turkey, including the cavity, trying to make it as smooth as possible, especially on the breast so it browns evenly. Stuff the cavity with the onion, garlic, herb sprigs and bay leaves.
Set the bird breast-side up on the prepared roasting rack. Tent the bird with foil.
Roast the turkey for 2 hours. Remove the foil and increase the oven temperature to 425 degrees F. Add a cup of water to the bottom of the pan so that the drippings don’t burn and continue to roast until an instant-read thermometer registers 165 degrees F in the thigh, 30 to 45 minutes. Let the turkey rest about 20 minutes before carving. You can strain the pan drippings and serve them on the side or reserve and blend them into your gravy for extra flavor.

Large Apple

1/2 Cup Ranch (Hidden Valleys or View Ranch)
1/2 cup Mayonnaise
1/2 Cup Melted Butter Or Margarine
1/2 Tablespoon Paprika
1/2 Tablespoon Garlic
1 Tablespoon Parsley Flakes
Turkey Stuffing Ingredients
1 Box Stuffing (@HEB Herb seasoned stuffing)
2 Cups Finely Chopped Onion (1 Large Onion)
2 Cups Finely Chopped Celery (6-8 Stalks)
1/2 Cup Melted Butter Or Margarine
2 Tablespoons Parley Flakes Or fresh Parsley
1 1/2 Chicken Broth
Cooking Details
19 Pound Turkey
Baked at 355 Degrees for 4 1/2 Hours
Uncover the turkey and continue to bake for 35 to 40 Minutes
To achieve a golden looking Turkey turn broil Hi and keep a close watch as it gets to the desired golden skin
Tip‼️
* Turkey is fully cooked when internal temp reaches 164 degrees (F)
* insert the thermometer in between the turkey leg and the turkey breast for best temp results. Don't confuse the stuffing as the turkey temperature : )
*Follow the suggested cooking time listed on the turkey package and roast and additional 35 minutes to achieve a golden roast.
*The oven used this year is a regular oven. If you have a BROIL tray at the bottom. Not to worry! Place oven on 500 degrees (F) keep Turkey in the exact location in the oven and you will produce enough heat to roast your turkey to perfection.
* You can achieve a faster roast by adding extra butter to the skin of the turkey before you broil. I skipped it for his recipe and broiled it for 35 minutes
* Take your turkey out of the freezer 3 days prior to cooking. Place it in your refrigerator go thaw out
