How To make Dill Cottage Cheese Batter Bread
1 pk Dry yeast
1/2 ts Sugar
1/4 c Very warm water
1 Egg
1 tb Dried instant onions
1 tb Butter or margarine
2 ts Dillweed
1 ts Salt
1 c Small curd cottage cheese
-warmed slightly 1/4 ts Baking powder
2 1/2 c Flour
Melted butter Grease a 1-quart baking dish. Sprinkle yeast and sugar over very warm water in 1-cup glass measure. Stir to dissolve yeast. Let
stand until bubbly, about 10 minutes. Beat egg slightly in large bowl. Add dried instant onions, butter, dill- weed, salt, cottage cheese and baking powder; beat until well blended. Stir in yeast mixture until well blended. Stir in enough of the flour to make a soft dough. Place dough in prepared baking dish. Cover with buttered wax paper and a towel. Let rise in warm place away from drafts until doubled in bulk, about 1 hour. Bake in preheated moderate oven (350) for 60 minutes or until loaf sounds hollow when topped with fingers. Turn bread out onto wire rack. Brush with melted butter and sprinkle with salt. Serve warm Makes 1 loaf (12 slices). Per slice, 134 calories, 3 g fat. Hey everyone, come along with me while I make a loaf of this amazing dilly bread! You know it’s a winner when it’s handed down through five generations!! See recipe below.
German Dilly Bread:
1 cup cottage cheese
1 Tb butter
2 Tb minced onion
1 heaping Tb dill seeds (must be seeds, dill weed won't work)
1 pkg yeast
1/2 cup warm water
2 Tb white sugar
1 egg
1/2 tsp salt
1/2 tsp baking soda
3 cups flour
Mix first four ingredients in a small sauce pan, heat on medium-low until butter melts - do not let it get too warm before adding to bread dough mixture.
In a mixing bowl, combine yeast, sugar and water, stir to dissolve yeast. Mix in one egg to yeast/water. Remove cottage cheese mixture from stove, stir in baking soda. Add cottage mixture to the bowl, stir to combine. Add 2.5 cups of flour and the salt, mix well. This is a sticky dough, so add the remaining 1/2 cup of flour a couple spoonfuls at a time, combine. You want to have a sticky dough that forms a ball on its own, and mostly pulls away from sides of bowl but still very tacky. Add flour until it reaches that stage. Once dough is at desired consistency, use a spatula to scrape it away from sides of bowl, then flour your hands, lift the dough in your hands, and fold it over itself until you form it into a ball. Place in an oiled round dish/pot, aprx 2-3quarts in size. Flip dough ball over so oily side is up. Cover with plastic wrap and let rise in a warm place for 1-2 hours, until double in bulk. Remove plastic from dish, preheat oven to 350*, bake for 50 min until brown on top. Let cool about 10-15 min before removing from dish onto a wire rack to cool.

Recipe:
3 c flour
1 tbsp sugar
2 tsp dried minced onion
2 tsp dried dill weed
1/4 tsp baking soda
1 tsp salt
2 envelopes dry yeast
1 cup cottage cheese
3/4 cup water
1 egg
Combine 1 1/2 c flour, sugar, onion, dillweed, baking soda, salt and yeast in a large mixing bowl. Heat cottage cheese and water in a saucepan over low heat (don't boil, but warm to about 110 F). Add the warmed cottage cheese and water to the dry ingredients. Add egg and stir well (can use mixer at med speed for 3 mins). Once blended well add in remaining flour gradually. Cover and let stand 15 mins. Grease 1 1/2 qt dish or 5 x 9 loaf pan. Place dough in dish and let rise a little longer until doubled. Bake at 350F for 45-60 mins.
NOTE: If you leave out the egg it's still good! :)
