Baked Honey Mustard Corned Beef
Happy St. Patrick's Day! There are many Irish recipes that call for honey. Here is a favorite from my followers. Baked Honey Mustard Corned Beef Hash takes 2 lbs. Corned Beef Brisket, 1 TBSP whole grain mustard seeds, 5 TBSP Dijon Mustard, 1 TBSP Cox's Honey, 1/4 c. dark brown sugar. Bake in 350° oven for 75 minutes. Broil 3-5 minutes. And yes I'm part Irish! Daughter of a successful beekeeper, Virginia grew up working the bees, packaging honey and helping her dad make deliveries in Southeast Idaho and parts of Utah. In 1978, she reigned as Idaho’s first Honey Queen. She has spent her life educating others about the uses of honey, beeswax and byproducts. Slow Cooker Corned Beef with Maple Mustard Glaze
Make the most of your slow cooker and try this corned beef with maple mustard glaze (recipe below). It’s perfect comfort food the family will love.

Corned beef with mustard maple glaze
Serves 8 Prep 15 mins
Cooking 4 hours 55 mins
1.5kg Coles Australian Corned Beef Silverside
¼ cup (60ml) malt vinegar
2 tbs brown sugar
2 dried bay leaves
1 garlic bulb, halved crossways
6 whole cloves
1 celery stick, thickly sliced
1 brown onion, cut into wedges
2 baby fennel, quartered
2 bunches Dutch carrots, peeled
6 small parsnips, peeled
2 small turnips, peeled, quartered
12 baby potatoes
¹⁄³ cup (80ml) maple syrup
2 tbs brown sugar, extra
1 tbs wholegrain mustard
1 tbs Dijon mustard
1 Place the beef in a slow cooker. Add vinegar, sugar, bay leaves, garlic bulb, cloves, celery, onion and fennel. Add enough cold water to just cover the beef. Cook for 4 hours on high (or 6 hours on low). Add carrots, parsnips, turnip and potatoes. Cook for a further 30 mins or until the vegetables are just tender.
2 Preheat oven to 200°C. Combine the maple syrup, extra sugar and combined mustard in a small bowl. Use tongs to transfer the beef from the poaching liquid to a roasting pan with the carrots, parsnips, turnip, fennel, garlic bulb and potatoes. Drizzle the mustard mixture over the beef and vegetables.
3 Roast, turning vegetables occasionally, for 20-25 mins or until beef is glazed and the vegetables are golden brown.
