This recipe here today was one of Raymond's childhood favourites his Mom would make, along with Corned Beef Cakes and Corned Beef Hash.

Ingredients:
3 or 4 carrots, peeled and sliced
2 medium onions, peeled and chopped
5 or 6 potatoes, peeled and sliced
1 quarter cabbage, shredded
1 can tomato soup, 284ml
1 can water or broth, rinse can
1 can corned beef, 340g
½ tsp sea salt
½ tsp pepper
½ tsp onion powder
Method:
Peel all vegetables and slice and chop then soak in a bowl of cold water, then open can of corned beef and chop in chucks, open can tomato soup pour in bowl and rinse can with cold water or broth then pour in the same bowl and mix together.
You will need a casserole dish with lid 9 x 13 inch pan or foil wrap or roaster with lid, start layering all veggies and corned beef.
Start with carrots, onion and shredded cabbage, ¼ of the corned beef, then top with potatoes and seasoning in between with sea salt, pepper and onion powder.
After top with tomato soup mixture, season again with sea salt, pepper and onion powder, then cover with lid or foil wrap.
Preheat oven to 350ºF and bake corned beef casserole for 2 hours, when cooked remove and serve with fresh bread rolls or bread sticks and a side of sour cream.
Bonita’s Tips:
Cook also in the slow cooker on low.
Cook on the BBQ with a roaster with lid and on the inside of the BBQ on low to medium heat for 1 hour more if needed.
Use left over corned beef or canned corned beef.

We take the humble tin of Corned Beef and turn it into something very tasty. Corned Beef Pasta Bake.
Here are the ingredients to our Corned Beef Pasta Bake.
2 cups of macaroni pasta,
1 tin of standard corned beef,
1 tin of chopped tomatoes,
Some grated cheddar cheese for the topping,
Some grated Mozzarella cheese,
1 finely chopped onion,
Some italian seasoning,
Some black pepper to taste.

INGREDIENTS for Fried Corned Beef Hash:
1 can corned beef 1 medium onion
½ bag hash browns pepper to taste
2 tbsp butter 1 tsp onion powder
Method:
In a frying pan add 1 tbsp butter and chopped onions, pepper, onion powder, fry until
light brown and cooked.
In a cookie sheet, add a piece of parchment paper, then rub some butter over top of
parchment paper, then add bag hash browns, bake in a preheated oven of 350ºF until
cooked and golden brown.
After onions are cooked add then to a deep bowl, then open corned beef and chop in
small pieces then put in same frying pan to cook.
After the corned beef is cooked, remove any oil then add in with onions.
Remove cooked hash browns from oven and toss those in to bowl with other mixtures.
Toss all together and serve hot with warm homemade bread. (ketchup and pickles).
(There are two ways to make this tasty corned beef hash, the other way was the way our elders did years ago.)
INGREDIENTS for Mashed Corned Beef Hash:
1 can corned beef 4 Boiled white potatoes
1 medium chopped onion Pepper to taste
2 tbsp butter 1 tsp Onion powder
1 tbsp milk 1 tsp sea salt
Method:
Follow the top method the only difference is you boil the potatoes with 1 tsp sea salt
until cooked, remove from boiler and drain water then mash with 1 tbsp butter, 1 tbsp
milk.
Then add your cooked onions and corned beef and continue mashing it together and
serve hot with a side of pickles or fresh bread.
Bonita’s Tips:
You can fry hash browns instead of baking them, I like them baked.
Frying the onions first gives the meal a nice taste. Keeping the corned beef hash warm
in the frying pan covered until ready to serve.
