How To make Diabetic Strawberry Jam
Ingredients
4
cup
strawberries, halved
1/2
cup
concentrated white grape juice (simmered down from 1-1/2 cups)
2 1/2
tablespoon
lemon juice
1/4
teaspoon
lemon rind, grated
1 1/2
tablespoon
unflavored gelatin (1-1/2 envelops)
Directions:
Place berries, juices and lemon rind in saucepan. Mash berries slightly to release juice. Heat to boiling. Sprinkle with unflavored geltatin. Remove from heat, skim and pack into hot jars with hot lids. Cool to room temperature before freezing.
Note: Because this is stored in the freezer, you may use any airtight, leakproof freezer container for storage, even plastic containers. Tastes better if allowed to sit for a week. Freezes beautifully for up to 6 months.

???? Ingredients: (I doubled this recipe today)
1. 2 quarts strawberries
2. 1 cup water
3. 3 TBS low sugar/no sugar pectin
4. Sweetener (if desired)
How to make it: (Wash/sanitize jars/lids & rings before canning)
1. Wash the strawberries & remove stems & caps. Crush the strawberries with a potato masher one layer at a time.
2. Combine strawberries, water & pectin in a large sauce pan, stirring constantly. Bring mixture to a boil over high heat. Add sweetener if desired & bring mixture back to a boil. Boil hard for 1 minute, stirring constantly.
3. Ensure the mixture reaches 220 degrees F before removing from the heat.
4. Skim off the foam.
5. Ladle hot jam into hot jars, remove air bubbles & wipe the jar rims clean with a wet cloth.
6. Place lids & rings on the jars (finger tight). Place jars into a simmering water bath canner (180 degrees F).
7. Ensure water covers the jars by at least 1 inch. Adjust heat to medium-high & put the lid on. Once the pot reaches a rolling boil, start the processing time. Process 1/2 pint jars for 10 minutes.
8. Turn off heat & remove the lid. Let jars cool for 5 minutes before removing. Remove jars, do not re-tighten rings. Cool for 12 hours. Check that the lids sealed, remove rings, label & store! That's it, enjoy!

Sugar free Strawberry Jam | easy and simple | small batch
Learn how to make a small batch of homemade sugar free strawberry jam! Sometimes you are tired of all the sugar in the jam when you buy from supermarkets. Well, this recipe is for you. Enjoy!
What you'll need:
500g fresh or frozen strawberries
180g Xylitol
This jam should be refrigerated since xylitol does not have preservative properties of sugar. You can use any brand of xylitol.
Xylitol is totally tooth friendly.
You cannot use Erythritol because after cooling down the jam the erythritol would crystalize and separates from the jam.
You cannot use Stevia since a very small amount of Stevia cannot help the consistency of the jam. Stevia also has after taste that not everybody like. If you really want to prepare this jam with Stevia. You may need to boil the jam a bit longer.
The overall outcome of this sugar free jam is you avoid huge amount of sugar. While still enjoying the amazing taste of strawberry jam. The mass produced contains about 70g sugar in 100g of jam. That is incredibly high.

20-30 drops monk fruit extract
