Ingredients List for your convenience:
2-3 large ripe bananas, mashed will equal to around 1 cup (approx. 8 oz.)
1-3/4 cups (210 grams) all purpose flour
1/2 tsp. baking soda
2 tsp. baking powder
1/4 tsp. salt or a pinch
1/3 cup (2.6 oz.) softened butter
2/3 cup (133 grams) granulated sugar
2 eggs, room temperature
2 tbsp. milk, room temperature
1/2 cup (64 grams) chopped walnuts for batter + 1/4-1/2 cup walnuts for topping
1 tbsp. quick oats for topping (optional)

The Tastiest Whole Grain Sugar Free Banana Bread ~ Great Recipe for Diabetics
If you have been following me for a while then you know my husband is a diabetic. I have been on a journey to develop delicious and healthy recipes for him that satisfy his sweet tooth but are friendly to his Diabetic diet. I am so please to to bring you this recipe that is free of white or enriched flour and sugar. This truly is a whole grain sugar free delicious banana bread. You simply won't believe how good it is and what a wonderful texture it has.
I utilize a mixture of whole wheat flour and oat flour to achieve this texture. Now, if you are like me and are either trying to maintain a diabetic or gluten free diet, you have tried a lot of different flours trying to achieve the same results you would get with white flour. Oat flour has by far come the closest. It is terribly expensive so I grind my own oats in my food processor to make my own flour. It takes a little more time but is so worth the effort. It is much more affordable and you are more likely to have it on hand. Our local grocery stores do not carry oat flour and I have priced it on the internet. Believe me, it is much cheaper to keep old fashioned oats on hand and grind them yourself and the results are so worth it!

HEALTHY BANANA BREAD | NO SUGAR! NO BUTTER! (EASY)
Wanted to share this easy health(ier) banana bread recipe. My kids love this it never ends up lasting! I hope you enjoy it and let me know if you try it!

Ingredients
2 eggs
1/2 cup canola oil or olive oil
1/4 cup honey or maple syrup
1/3 cup milk or Greek yogurt
1 tablespoon vanilla extract
1 cup mashed ripe bananas about 2-3 medium bananas
1 3/4 cups whole wheat flour
½ teaspoon ground cinnamon optional
•1 teaspoon baking soda
•½ teaspoon salt
1/2 cup dark chocolate chips or chopped walnuts, raisins, optional
•Pre-heat oven to 350C. Grease a 9x5 inch loaf pan and set aside
In a medium bowl, whisk the flour, baking soda and salt. Set aside.
In a large bowl, beat eggs, oil, honey, milk and vanilla for 2 minutes. Stir in the bananas, flour mixture and chocolate chips (or any other add ins of choice.)
Pour batter into greased pan, sprinkle with some more cinnamon, raw sugar, or banana slices (optional) Bake for 50-55 minutes or until a knife inserted comes out clean. Cool for 10 minutes, slice and enjoy!

INGREDIENTS
Wet:
- 3 very ripe bananas
- 1 large cup sliced dates (tightly packed / seeds removed) (this equals approx 3/4 cup date paste*)
- 1/2 cup melted coconut oil
- 1 tbsp almond milk
- 1 egg
- 1 tsp vanilla extract
Dry:
- 1 cup of GF flour (I used almond)
- 1 cup oats
- 1 cup walnuts (halved) (can also use pecans)
- 1 tbsp cinnamon
- 2 tsp cardamom (optional, but I love it!)
- 2 tsps baking powder
- 1 tsp baking soda
- 1/2 cup dark chocolate chips
- Pinch of sea salt
(Optional toppings: shredded coconut (unsweetened), more halved walnuts & dark choc chips)
DIRECTIONS:
Preheat oven to 350’ F / 180’ C
(*To create the date paste - place 1 heaping, tightly packed, cup of dates in food processor, or blender, with a touch of water, blend until smooth and creamy)
1. In a large bowl, mash bananas with fork
2. Add in all wet ingredients (coconut oil, date paste, vanilla extract)
3. In a separate bowl, combine the dry ingredients (GF flour, oats, baking powder, baking soda, cinnamon, cardamom, salt + walnuts and dark choc chips)
4. Gently stir in the dry ingredients to the wet ingredients
5. Grease pan with coconut oil, line with parchment paper, place mixture inside and let bake for approx 60 mins (or until a toothpick inserted comes out clean and top is golden brown)
6. Remove from tin and let cool on a baking rack for 30 mins, slice and ENJOY!! ♥
TIPS:
- To make this recipe vegan, you can substitute the egg for a chia egg (1 tablespoon of chia seeds mixed with 3 tablespoons of water and let the mixture sit for 15 to 20 minutes or you can prepare it the night before.)
- If you want to make the banana bread sweeter, just add more dates to make more date paste
- If you don’t have dates, you can use 3/4 cup of maple syrup or honey
- To melt coconut oil, first fill measuring cup with solid oil, place cup in hot water / or on a very light temperature on the stove to allow the oil to melt. As oil begins to melt, add more solid oil until perfect amount is reached
