1 1/2 c Rice flour
1/2 c Brown rice flour
1 tb Baking powder
1/2 ts Xanthan gum
1/2 ts Baking soda
1/4 ts Salt
1 c Low-fat buttermilk
2 Eggs; OR...
1/2 c - frozen egg substitute
- (thawed) OR... 4 -Egg whites
3 tb Vegetable oil
1/3 c Orange juice concentrate
-- (frozen), thawed 1 tb Grated orange peel, optional
1 c Chopped pitted dates
Combine rice flour, brown rice flour, baking powder, xanthan gum, baking soda and salt

Date Muffins
The perfect date muffins that can be easily whipped up for breakfast or a brunch treat.
Ingredients
1/2 cup chopped dates
1/2 cup boiling water
1/4 cup melted butter
1/2 cup Natura Light brown sugar
1 egg
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/4 cup chopped walnuts or pecans
Method:
1. Place dates in a small bowl and add boiling water; let stand for 10 minutes (do not drain).
2. In a small bowl, beat butter and sugar until creamy. Beat in egg.
3. Combine the flour, baking powder, baking soda and cinnamon; fold in the date mixture just until blended. Stir in walnuts or pecans.
4. Fill muffin cases two-thirds full. Bake at 180 degrees for 15-20 minutes or until a toothpick comes out clean.
5. Serve best with a cup of coffee. Enjoy !!!

Coffee Date ... MUFFINS!
Until we can actually go on coffee dates here is a sweet and healthy treat to enjoy at home! Just in time for Valentine's Day or of course can be enjoyed anytime!
RECIPE: ( Makes 24 mini muffins / 12 regular muffins )
- 1 1/2 cup pitted Medjool Dates ( approx. 38 )
- 2 tbsp Instant Coffee dissolved in 4 tbsp hot water ( or strong espresso )
- 200 ml / just shy a cup Unsweetened Soy Milk ( milk of your choice )
- 1 cup minus 2 tbsp / 140g Whole Wheat Flour
- 1 1/2 tsp Baking Soda
- Dash of Cinnamon / Nutmeg ( Optional )
- 2 tbsp Cacao Powder ( or Cocoa Powder )
- 2 generous tbsp Honey ( or Maple Syrup / Agave Nectar )
- 2 tbsp Coconut Oil
- 2 Eggs
Glaze: ( Optional )
- 1/2 cup Powdered Sugar
- Dash of Cinnamon
- 1/2 tsp Vanilla Extract
- 1 tbsp Maple Syrup
- 2 tsp water for thick glaze ( add 1 tsp at a time as needed for desired consistency)
