How To make Debbie's White Chocolate Cheesecake
CRUST 3/4 c Almonds, ground
3/4 c Oatmeal, uncooked
3/4 c Graham cracker crumbs
1/4 c Sugar
1/4 c Margarine, + 2 TBS., melted
FILLING 16 oz Cream cheese, softened
1 c Sugar
16 oz Sour cream
1 ts Vanilla
8 oz White chocolate, melted
4 Egg whites
1/8 ts Cream of tartar
1 tb Powdered sugar
Combine first 5 ingredients in a medium bowl; blend well. Press onto bottom and 2 inches up sides of a 10 inch springform pan. Bake at 350 degrees for 5 minutes. Cool on wire rack. Combine cream cheese and 1 cup sugar in a large mixing bowl; beat at medium speed of an electric mixer until fluffy. Add sour cream and vanilla; mix well. Stir in white chocolate. Beat egg whites (at room temperature) in a large bowl at high speed of an electric mixer until foamy; add cream of tartar, beating until soft peaks form. Fold egg whites into cream cheese mixture. Spoon mixture into crumb crust. Bake at 325 degrees for 55 minutes; turn oven off. Leave cheesecake in oven 30 minutes; partially open door of oven and leave cheesecake in oven an additional 30 minutes. Cool, chill 8 hours. Remove from pan. Yield 10-12 servings. ............ No Bake Peppermint Cheesecake

I am not a Chef just a Home Cook. I make simple and easy recipes.
I grew up on garden food and southern home cooking. I will be sharing some recipes that my Momma made and other family recipes and things I made for my family when my kids were growing up. I also look for new things to make online or recipe books and will make it and give it a try.
No bake Peppermint Cheesecake Recipe:
Filling:
Any crust you like (Graham cracker, Shortbread or Oreo chocolate) I used the Oreo crust. You can make your own or buy it ready made.
8 oz cream cheese, room temperature
1/2 cup granulated sugar
6 oz (3/4 cup) white chocolate, melted and slightly cooled
2 1/4 tsp peppermint extract
1 tsp vanilla extract
1 1/4 cups (300ml) heavy whipping cream, cold
3/4 cup (86g) powdered sugar
1/4 cup crushed peppermint candies
To make homemade whipped cream to pipe on ingredients:
1 cup (ml) heavy whipping cream, cold
1/2 cup (58g) powdered sugar
1/2 tsp vanilla extract
Beat until stiff peaks form and pipe around edge of pie.
Directions:
In a large mixer bowl, beat the cream cheese and sugar together until well combined and smooth.
Add the melted and slightly cooled white chocolate in three parts and mix with electric mixer (clean beaters) until well combined and smooth after each addition.
Add the peppermint and vanilla extract and mix until well combined and smooth. Set mixture aside.
In another mixer bowl, medium size, add the heavy whipping cream and powdered sugar. Whip on high speed until stiff peaks form.
Carefully fold the whipped cream into the cream cheese mixture in two parts until well combined.
Gently fold in the crushed peppermint.
Add the filling to the crust and spread into an even layer. Refrigerate cheesecake until firm, 5-6 hours or overnight.
Pipe whipped topping around edge or use the whipped topping from a can which is what I used. Add more crushed peppermint candies on top. Keep in fridge or freezer till ready to serve.
Note:
Cheesecake is best eaten within 4-5 days if kept in fridge.
If kept in freezer it lasts for up to 2 months. Just thaw it in the fridge overnight before enjoying!

WHITE CHOCOLATE RASPBERRY SWIRL CHEESECAKE
INGREDIENTS
1 (12 oz.) package frozen raspberries
1/2 cup water
2 tablespoons sugar
1 tablespoon cornstarch
1 1/4 cups graham cracker crumbs
1/4 cup butter, melted
2 cups white chocolate chips
1/2 cup Half and Half
3 (8 oz.) packages cream cheese, softened
1/2 cup sugar
1 tablespoon flour
3 eggs, room temperature
1 teaspoon vanilla
INSTRUCTIONS
In a medium bowl, mix together graham cracker crumbs and melted butter. Press mixture into the bottom of a lightly greased 9 inch springform pan.
In a medium saucepan, make the raspberry sauce by combining raspberries, 2 tablespoons sugar, cornstarch, and water. Bring to boil, and continue boiling 5 minutes, or until sauce is thick. Strain sauce through a mesh strainer to remove seeds.
Place a baking pan filled with hot water on the lower rack of the oven. Preheat oven to 325 degrees. In a metal bowl over a pan of simmering water, melt white chocolate chips with half-and-half, stirring occasionally until smooth. Alternately, white chocolate can be melted in the microwave with the Half and Half in a glass bowl, at 50% power, stirring every 30-60 seconds until smooth.
In a large bowl, beat cream cheese and 1/2 cup sugar with an electric mixer until smooth. Blend in flour. With mixer on low speed, blend in eggs one at a time. Blend in vanilla and melted white chocolate.
Pour half of batter over crust. Spoon 3 tablespoons raspberry sauce over batter. Pour remaining cheesecake batter into pan, and again spoon 3 tablespoons raspberry sauce over the top. Swirl batter with the tip of a knife to create a marbled effect.
Bake for 55 to 60 minutes, or until filling is set. Cool, cover with plastic wrap, and refrigerate for 8 hours before removing from pan. Serve with remaining raspberry sauce.

1/4 cup powdered sugar
Cookies:
1 cup softened butter (226g)
3/4 cup white sugar (150g)
1/4 cup brown sugar (50g)
1 egg
1 tsp vanilla extract (teaspoon)
1tsp baking soda (teaspoon)
1/4 tsp salt (1.5g)
2 3/4 cup all-purpose flour (335g)
1/2 cup fresh (small diced) strawberries (85g)
