Breaking Bad - Blue Meth Chocolate Mousse | TV Dinners
TV Dinners ends on a high (get it?) with this white chocolate mousse, sprinkled with Walter White's trademark blue meth. How To Kitchen have gone next level with this episode, featuring explosions, nudity, drugs and violence.
-INGREDIENTS-
WHITE CHOCOLATE MOUSSE
175 grams white chocolate
90 ml milk
2 egg whites
¼ teaspoon lemon juice
225 ml double cream
BLUE METH SUGAR
3¾ cups (750g) white granulated sugar
1½ cups light corn syrup
1 cup (210ml) water
1 tablespoon lemon, or other flavoured extract
1 drop of blue food gel
NOTE: If you don't have light corn syrup, you can substitute it for one cup (200g) sugar + 1/4 cup (50ml) water.
-MOUSSE METHOD-
1. Whip the egg whites until they form stiff peaks
2. Pour the milk in to the white chocolate and combine fully
3. Add the white chocolate mixture to the egg whites, fold VERY CAREFULLY
4. Whip the cream until it forms soft peaks
5. Gently fold the cream in to mixture
6. Add in two drops of blue food gel, fold gently until all combined
7. Pour in to serving dishes and pop them in the bridge for at least 2 hours
-METH METHOD-
1. In a medium saucepan, mix together the sugar, corn syrup and water.
2. Stir continuously over a medium heat until all the sugar has dissolved.
3. Bring the mixture to the boil and stop stirring from this point on.
4. Using a jam thermometer, heat the mixture to 300-310 degrees F (149-154 degrees C).
5. If you don't have a jam thermometer (they're about £5 online), drop a small amount of syrup in to cold water, if the mixture forms hard, brittle beads, it's ready.
6. Remove the pan from the heat and stir in your colouring and flavouring.
7. Pour the sugar in to a baking tray lined with grease proof paper. Be extremely careful when working with sugar!
8. Allow the sugar to cool to room temperature, once the sugar has hardened, smash in to pieces and serve!

Today we are creating the Tie Dye Cheesecake from the Pop century resort at Walt Disney World Orlando, Florida. The traditional snack/dessert has red velvet cake as the base but we changed it to red velvet sandwich cookies instead.
Full Ingredients:
250 grams Red Velvet Sandwich Cookies
600g Cream Cheese
100g Icing/Powdered Sugar
284ml Double/Heavy Cream
Food Colouring (any colours you like)
