How To make Favorite Oatmeal Date Cookies
1 l Pitted dates
2 c Water
1/3 c Tahini
(old fashioned peanut butter May be substituted) 1 c Wheat germ
9 c Old fashioned rolled oats
2 ts Baking powder
2 ts Baking soda
1/2 ts Salt
2 1/2 ts Vanilla
2 c Chopped toasted pecans
2 1/2 c Raisins
Chop dates in food processor. Add part or all of the water and blend until dated are pureed. Pour puree and any remaining water into a very large mxing bowl. Add tahini and blend well. Add wheat germ, oats, baking powder, baking soda, and salt and blend well. Add vanilla while beaters are mixing the dough. Slowly blend in nuts and raisins. Batter will be very stiff. Blend until all ingredients are evenly distributed. Preheat over to 350 degrees. Drop onto non-stick cookie shhet and flatten with a spoon. Or shape by hand into desired shapes. These cookies will not flatten or spread. They may be baked close together. Bake 12 to 15 minutes or more, depending on sides, at 350 degrees. Store in refrigerator. -----

Oatmeal-Date Cookies
Yields: 18-24 cookies, depending on size
1 cup Rolled Oats
3/4 cup Unbleached All-Purpose Flour
1/3 cup Coconut Sugar
2 tsps Baking Powder
1 tsp Baking Soda
1/4 tsp Sea Salt
1/3 cup Maple Syrup
1/2 cup Nut Butter of choice
1 tsp Vanilla Extract
1/2 tsp Molasses
1/4 cup Chopped Dates
1/4 cup chopped Pecans
1-4 Tbsps non-dairy Milk, as needed
Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.
Add oats, flour, sugar, baking powder, baking soda, and salt to a large bowl. Mix well to combine. Add the syrup, nut butter, vanilla and molasses and stir to combine. Add non-dairy milk, as needed, if dough seems to dry to roll into balls. Fold in the dates and nuts.
Scoop out tablespoons of dough and roll into balls. Wet your hands slightly with water to avoid dough sticking to your hands. Flatten slightly and place on prepared cookie sheets.
Bake 8-12 minutes, or until lightly browned. Cool on sheets for 5 minutes, then remove to a wire rack to cool completely.
Store on counter in an airtight container.
