Ingredients:
2 cups brown sugar
1 cup shortening
½ cup yogurt or sour cream
3½ cups all-purpose flour
1 tsp baking soda
1 tsp salt
2 eggs
1½ cups pecan halves, roasted and chopped
¾ cup pecan halves (not roasted)
2 cups glazed fruits
2 cups pitted dates, chopped

0:09 Preheat oven to 385 degrees F and line a baking sheet with parchment paper.
0:16 Sift together flour, baking soda, and salt then set aside.
0:33 In a mixing bowl with a mixer attachment, combine brown sugar and shortening. Cream for roughly 8 minutes until pale and doubled in volume.
0:58 Add yogurt or sour cream and eggs then continue creaming.
1:17 Fold in the sifted four mixture into the wet mixture until evenly incorporated.
1:30 Finally, fold in the chopped pecans, glazed fruits, and dates until evenly incorporated.
1:51 Cover, then transfer the dough to a chilled area. Allow dough to rest for at least an hour.
1:58 Portion roughly 1½ to 2 ounces of cookie dough onto your baking sheet, inches apart from each other.
2:06 Place a pecan half on each portioned cookie dough.
2:18 Transfer to the oven and bake for 15 to 20 minutes until fully baked, or no indentation remains when touched lightly.

Ingredients
Grated Apple
Boiled Milk - 1 Litre
Roasted Vermicelli - 3 Tsp
Chopped Dates
Cashew Nuts
Raisins
Sugar - 3 Tbsp
Cardamom Powder - 1/4 Tsp
Rose Essence - 2 Drops
Ghee
Method:
1. Take ghee in a pan. Add cashewnuts, raisins and pitted-chopped dates to it.
2. Roast them well and keep them aside.
3. To the same pan, add ghee and grated apple to it.
4. Cook the apple for 5 mins and add sugar.
5. Cook the apple until the sugar completely melts and then transfer it to a plate.
6. Take a huge kadai and add milk it to.
7. Add vermicelli to the milk and cook for 10 mins.
8. Add sugar and mix well.
9. Add in cardamom powder, grated apple and boil the milk for 2 mins.
10. Now add rose essence and mix.
11. Add in the roasted cashewnuts, raisins and dates to the milk and cook for 2 mins.
12. Dates apple kheer is ready to be served hot or cold.
Dates are known for their rich nutrition and apple is an all time favorite for many people who say an apple everyday keeps the doctor away. So with these two great base items, I tried making an Indian style porridge, famously known as Kheer or Payasam. The use of almonds in the preserve adds to the heart-healthy omega fat, magnesium, potassium, iron, calcium and zinc making it a superfood to strengthen bone and memory.

Ingredients:
Dates (Kalmi): 200g
Apple: 150g
Almonds: 50g
Raisins:50g (golden variety )
Citric Acid:1/2 tsp
Cinnamon powder :1 tsp
Water: 200ml
Method:
1. In a double bottom steel pan add 1 glass of water and ½ tsp of citric acid.
2. Cut Apple with the skin into fine pieces.
3. Add apple pieces & deseeded Dates ( Kalmi or any fleshy variety). Cover it with a lid and let it cook for 10minutes.
4. Add 1 tsp of Cinnamon powder. Mix well and let cook till the apple and date mix softens.
5. Blenderize the apple date mix to a smooth consistency.
6. Let the Apple & Dates mixture cook in the same double bottom steel vessel with Golden raisins and shredded almond mixture.
7. Keep stirring with a wooden ladle and cook until the Apple and Dates mix thickens to a jam-like consistency.
8. To check for doneness take a drop of the golden mix on a plate and tilt the plate, if the drop of jam mix maintains its shape stop cooking.
9. Fill the hot jam in a sterilized glass container.
10. Let it cool.
11. The Dates Apple Jam is ready to serve.

Instructions

Butter 3 tbsp.
Cardamom powder 1/4 tsp
Almonds (chopped) 1/2 cup
Sesame seeds 3 tbsp.

Ingredients for Coconut Mixture:
Condensed milk 1 cup
Desiccated coconut 3 cups
Green gel food color 1-2 drops
Ingredients for Dates Bar:
Dates Mixture as required
Poppy seeds as required
Pistachios (crushed) as required
Ingredients for Date and coconut bar:
Dates mixture as required
Coconut mixture as required
Poppy seeds as required
Desiccated coconut as required
Directions for Dates Mixture Preparation:
1. In a pan heat butter and add dates, cardamom powder and cook on low flame until soft.
2. Add almonds, cashew nuts, pistachios, sesame seeds and cook for 2-3 minutes on low flame.
3. Take off flame and let it cool at room temperature.
Directions for Coconut Mixture Preparation:
4. In a pan add coconut, condensed milk and cook for 2-3 minutes on low flame.
5. Now add food color and mix and cook until evenly colored.
6. Take off flame and let it cool at room temperature.
Directions for Dates bar Preparation:
7. Take dates mixture and flatten it with your hands, roll it into log shape.
8. Spread poppy seeds on board and roll the prepared dates bar of poppy seeds.
9. Refrigerate for 24 hours. Cut into slices, sprinkle pistachios on top and serve.
Directions for Dates and Coconut bar Preparation:
10. Take coconut mixture and roll it into log shape.
11. Take dates mixture, flatten it with your hands, remove uneven edges and place coconut bar in the middles of dates mixture sheet.
12. Roll the dates mixture around coconut bar, spread poppy seeds on board and roll the prepared date and coconut bar on poppy seeds.
13. Refrigerate for 24 hours, cut into slices, sprinkle desiccated coconut on top and serve.
