How To make Dark Fruitcake
2 c Golden raisins
2 c Currants
2 c Dried apricot halves
2 c Dried figs, halved
1 c Pitted prunes
1 c Pitted dates
4 c Walnuts, in large pieces
2 c Pecans, in large pieces
3 Oranges, Grated zest only
3 Lemons, Grated zest only
1/2 c Candied ginger, chopped
2 ts Cinnamon
1 ts Ground allspice
1 ts Mace
1/2 ts Cloves
1 c Molasses
2 c Brandy
-(or substitute apple juice - or water) 1/2 c Orange liqueur
- (or orange juice) 4 c All-purpose flour
1 tb Baking powder
1 ts Baking soda
1 1/2 ts Salt
1 lb Butter
3 c Dark brown sugar
8 Eggs
1 tb Vanilla extract
THE DAY BEFORE combine all dried fruits, nuts and zest in a mixing bowl. Add the candied ginger and the spices and toss well to mix. Add molasses and liquids and mix well. Cover and let stand overnight at room temperature. When ready to bake, preheat oven to 275F. Grease 4 (9-by-5-by-3-inch) loaf pans, line them with waxed paper and grease the paper. Coat lightly with flour. Sprinkle 1 cup flour over fruit mixture and stir it. Combine the remaining 3 cups of flour with baking powder, baking soda and salt and sift them together on a sheet of waxed paper. Cream the butter, add the brown sugar and beat well. Add eggs, 2 at a time, beating well after each addition. Add the vanilla. Add all dry ingredients and beat until batter is blended and smooth. Pour batter over fruit, mix well until everything is coated with batter. Divide batter among loaf pans, filling to 1/2 inch below top. Bake for 2 hours. Don't worry if they crack on top.
Cakes are done when a straw inserted in the center comes out clean. Makes 4 Cakes

1/2 cup softened butter
1/2 cup dark brown sugar
2 tbsp molasses
3 whole eggs
1 1/2 cups all purpose flour
1 1/2 teaspoon BAKING POWDER (NOT baking soda)
1/2 teaspoon salt
1 teaspoon cinnamon powder
1/2 teaspoon ginger powder
1/2 teaspoon nutmeg
1 1/2 cups glazed fruits
1 cup coarsely chopped walnuts
1/2 cup dark rum OR any liquor of choice OR apple juice if not using liquor.

It is full of dried fruits and nuts, laced with alcohol over several weeks, and often covered with marzipan and royal icing. The problem is that it's both expensive to make and it needs time to age. Luckily, there is a much simpler version of this cake for the last minute baker, and I call it an Easy Fruit Cake.

Dark Fruit Cake
The second item on my Christmas baking list. Delicious dark fruit cake with dark spiced rum soaked fruit. If you love fruitcake this makes a lovely moist and yummy Christmas Dark Fruit Cake. Recipe follows:
Dark Fruit Cake
(On day two) Preheat the oven to 275°F (135°C)
Grease (with butter and line with brown paper or parchment paper) and grease again an 8x 8x 3 (20 cm x 20 cm x 7.5 cm) fruit cake pan (or I have used a 10 (25.5 cm) angel food cake pan or an 9x13 x 3( 23 cm x 33 cm x 7.5 cm) stoneware pan)
Day one : Combine, cover tightly and let stand overnight
2 cups (500 ml) raisins
1 cup (250 ml) currants
1 cup (250 ml) chopped dates
2 (8 ounce)(250 gm) packages glace cherries (one red one green)
1 (8 ounce)(250 gm) package chopped mixed peel
1 (4 ounce)(100 gm) package chopped pecans (or your favourite nuts - you can use slivered almonds or chopped walnuts)
1/2 cup (125 ml) dark spiced rum (I used Kraken Rum)
Day two: The next day, dredge the fruit mixture in
1/2 cup (75 gm) all purpose flour
Set aside for later
Sift or blend together
2 cups (300 gm) all purpose flour (US bread flour UK strong flour)
1/2 teaspoon (2 ml) salt
1/2 teaspoon (2 ml) baking soda
1 teaspoon (5 ml) cloves
1 teaspoon (5 ml) ground all spice
1 teaspoon (5 ml) cinnamon
Cream
1 cup (227 gm) butter
Gradually beat in
2 cups (500 ml) brown sugar lightly packed
6 eggs
Mix together
3/4 cup (180 ml) molasses
3/4 cup (180 ml) apple juice
Add sifted dry ingredients to creamed mixture alternately with liquid
Make 3 dry and 2 liquid additions, combining lightly after each addition. Fold in floured fruit.
Turn into prepared pan. Grease (with butter and line with brown paper or parchment paper) and grease again an 8x 8x 3 (20 cm x 20 cm x 7.5 cm) fruit cake pan (or I have used a 10 (25.5 cm) angel food cake pan or an 9x13 x 3( 23 cm x 33 cm x 7.5 cm) stoneware pan)
Bake in a preheated 275°F (135°C) oven for 3 to 3 1/2 hours or until cake tests done with a toothpick or cake tester.
Remove cake from pan to a large and sturdy cooling rack, and lift off paper. Turn cake over so top is up. Be careful, the cake is soft until it cools. Allow cake to cool to room temperature (this takes several hours). Wrap well in plastic wrap and store in a large container. When the cake is cool you can cut it, but it will improve with a few weeks aging.
Finished cake weighted in at 2.8 kg or 6.2 pounds.

1/8 cup rhum
1 3/4 grams all purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup brown sugar
1/2 cup unsalted butter
1/8 cup molasses
1/4 cup grape juice concentrated
3 pieces medium eggs
*glazed cherries
*walnuts
*light corn syrup

How to Make Belizean Black Fruitcake Recipe
Sharing my mom’s “secret” Black Fruitcake recipe with you. I know she would be very proud watching down on me.
???????????? BELIZEAN BLACK FRUITCAKE
1 ½ cups fruitcake mix/candied fruits, diced
½ cup prunes, diced
¼ cup raisins
½ cup brown sugar
½ cup brandy
*Stew fruits over medium-low heat for 15 minutes.
1 stick margarine (8 tablespoons)
½ cup brown sugar
2 eggs
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon allspice
½ teaspoon vanilla
¼ cup stout
4 tablespoons browning (add more if you like)
*Bake at 300 F or 150 C for 60-65 minutes or until a toothpick inserted in center comes out clean.
